Pink Princess Bounty Balls

If you want something sweet and satisfying, these ‘pretty in pink’ easy homemade bounty balls (or bars) are the golden ticket. Once you try this delicious Copy Cat recipe, you will never reach for store-bought candy again!
Their eye-catching pink colour comes from the addition of beetroot. Besides colour, this root vegetable adds fibre, vitamins, and minerals. But don't worry; the flavour is mild and kid-friendly!
They taste so good, you would never believe they were good for you – that might be my favorite thing about these bounty bars. My second favorite thing? They are no-bake, so it’s about as low-effort as making a dessert can get.
They make for easy grab-and-go snacks, an excellent treat to gift to friends, or serve as desserts. I’m a big fan of coconut and keeping a batch of these in my fridge has definitely helped keep the chocolate cravings at bay.
If you are looking to upgrade your candy selection, coconut is a great ingredient to incorporate into your recipes. Not only is it naturally sweet, but it’s also a source of healthy fat, helps to keep your teeth and bones healthy, and can even keep you hydrated.
Only seven healthy ingredients too, three of them coconut variations. No added sugar, no ingredients you can't pronounce. Just real wholesome goodness! The best part is how simple they are to make. Throw them up in a food processor and roll or shape!
So simple to make these healthy no-bake snacks are gluten free, dairy free and  are perfect for a quick snack or dessert or to pack in a lunchbox or share with friends!
Energy bites are one of my FAVORITE things to meal prep for a healthy snack. They are cheaper than buying store bars and better for you because you can control the ingredients. They are quick to make with only a short ingredient list, but they look and taste so decadent. Oh my! What a dreamy treat.

Moreish snack balls, snack bars, bliss balls, truffles, energy bites, call them what you like. They are a perfect little nutrient-dense bite for a satisfying and are seriously SO GOOD. They make the perfect gift for any of your health-conscious or chocolate-loving friends too.
There are so many reasons to love them! Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball or bar as a snack is an absolute genius in my book.

Ingredients

  • 2 cups desiccated coconut
  • 1 cup coconut butter, store bought or recipe below in notes
  • 1/4 cup honey or maple syrup
  • 2 teaspoons vanilla extract
  • 1/4-1/2 teaspoon beet juice (see recipe note below) - or few drops natural red or pink food colouring

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Add desiccated coconut, coconut butter, honey, vanilla and beet juice to a food processor and process until everything is well combined and the mixture starts to stick together. It should be sticky when pressed between your fingers.
    Roll the dough into 10-12 balls or bars (or more smaller squares) if preferred shaping them with your hands. Place them on a tray lined with parchment paper and freeze for 1 or more hours, or until firm.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Dip the chilled balls or bars one at a time in the melted chocolate using a spoon and/or a fork, carefully moving around to ensure each is fully coated.  Once covered lift them out onto a tray lined with parchment.
    If desired, you can dip them in a second coat of chocolate or drizzle with any leftover melted chocolate. Place them in the freezer to set for 5-10 minutes.
    Storage: Place them in an airtight container and refrigerate them for up to a week. To freeze, just pop them in an airtight container and they will be good for up to 4 weeks.
     

Natural Beetroot Food Dye

  • To make beet food dye, simply wash a beet and grate it. Protect your counter surface with towels, or grate on a plate or use a food processor.
    Once your beet is grated, gently squeeze the beet juice into whatever you wish to dye a few drops at a time until the required colour is reached. A single beet should yield about 3 tablespoons of juice.
