Who doesn’t love a good protein/energy bar? They are among the most tasty, filling, and convenient healthy snack ideas you can enjoy. If you are looking to make homemade protein bars, though, then you have probably got an inkling that DIY’ing it has certain advantages.
The main draw with going the homemade route is the infinite customizability. When you make your own bars, you never have to compromise on getting exactly what you are looking for.
You can also save money by making your own healthy homemade bars and they can taste way better than anything you can buy at the store.
Store bought protein bars can be expensive. Even the cheaper brands that tend to have more added sugar and other unnecessary ingredients are still a few dollars per bar. Not to mention the bars with more quality natural ingredients.
These homemade bars - have a chewy, crunchy texture and are made with ingredients that you can find at almost any grocery store. They are one of my go-to recipes to make so I can have a quick snack to grab on a busy day.
In my opinion,they are better than store-bought protein bars because they don't have any preservatives and artificial sweeteners.
What I love most about this recipe:
So easy to make. You simply warm the ‘melty’ ingredients in a saucepan, then add all the other ingredients and coat them in this mixture. Then you press them into a pan or mold and let the refrigerator firm it all up to create this dense and rich, healthy-fat and protein-packed slice of heaven.

This perfect protein bar recipe feels like everything that I have been working towards in my life, all sliced up in a oh so peanut buttery little bar of pure, unadulterated magic.

Ingredients

  • 3/4 cup nuts of choice - almonds, walnuts, cashews, peanuts or a mix, chopped
  • 3/4 cup dried fruit - dates, cranberries, apricots, pineapple or a mix, chopped
  • 1 cup desiccated coconut
  • 1/2 cup nut butter of choice - peanut, almond, tahini or a mix
  • 1/2 cup oats, instant or quick
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup protein powder – optional but adds more protein

Instructions

  • If you wish to increase the flavour of your bars, roast your nuts first. To do this, preheat your oven to 350°F and spread the nuts you have chosen to use onto a large baking sheet; bake the nuts for 7 to 8 minutes, until lightly toasted and fragrant.
    You can then chop the nuts by hand with a knife on a chopping board or put them in the food processor and blitz them.
    If you choose to blitz them, be careful not to over process as its nice to have some different sized ‘bits’ in your protein bars. I like to do mine by hand with a knife and can control how many big bits I chop or how many small pieces and aim for a mix.
    Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Or use a silicon snack bar mold.
    Melt nut butter, honey and coconut oil in medium sized saucepan over a low heat. Stir until melted and well combined.
    Take off heat and add all other ingredients to the pot, chopped nuts, chopped dried fruit, coconut, oats, protein powder if using and vanilla extract.
    Scoop mixture out into the baking pan and spread out evenly or fill the snack bar molds. Place in refrigerator for 1-2 hours to firm up.
    Remove from refrigerator and cut into 8 bars or 16 squares or pop out of molds.
    Store in fridge for up to a week or freezer for up to 3 months.
