Peppermint Snacka Balls

Moreish snack balls, bliss balls, energy bites, call them what you like, are one of the easiest things to make, and they are a perfect little nutrient-dense bite for a satisfying and beneficial snack! After all, who doesn’t love a good protein/energy ball or bar? They are among the most tasty, filling, and convenient healthy snack ideas you can enjoy. If you are looking to make homemade energy balls, though, then you have probably got an inkling that DIY’ing it has certain advantages.The main draw with going the homemade route is the infinite customizability. When you make your own healthy treats, you never have to compromise on getting exactly what you are looking for. You can also save money by making your own healthy homemade bars and snacks and they can taste way better than anything you can buy at the store.No baking necessary here. All the work is done in your blender or food processor. Throw everything in then blend it up until it comes together in a sticky ball. Then roll that sticky dough into small balls and if you would like, roll them in coconut and drizzle with chocolate.They can be made start to finish in 15 minutes. Maybe 10 if you are quick or skip the chocolate drizzle. The chocolate drizzle just makes them look a lot prettier than the round, white coloured balls they look like pre-drizzle. But you can opt for or against the chocolate drizzle.I love having my freezer stocked with snacka/energy balls like these ones for pre-workout snacks or whenever I just want a ‘lil somethin’.

Ingredients
- 1 cup Brazil nuts (or almonds or walnuts, or a mix)
- 1 cup desiccated coconut, plus extra for coating
- 1/2 cup protein or collagen powder
- 2 tablespoons coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon peppermint extract or 2-3 drops pure peppermint oil
Chocolate Drizzle
- 1/2 cup chocolate chips
- 2 teaspoons coconut oil
Instructions
- Process the Brazil nuts and desiccated coconut in a food processor until broken down and crumbly. Add the protein powder, coconut oil, honey and peppermint extract and process until well combined. Be careful not to over process as its nice to have texture variance and different sized “bits” in your snacka balls. Taste test and add more honey or peppermint if you think it needs it.Roll the mixture into tablespoon sized balls and coat in the extra desiccated coconut. Leave in the fridge or freezer to set.
Chocolate Drizzle
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Once set, drizzle the balls with the melted chocolate if desired. Store in the fridge or freezer.
