Peanut Butter Oat Cups

Delicious oaty cups with a layer of peanut butter all topped with smooth chocolate – super delicious and packed with goodness.
They are such a simple recipe that come together in just under 20 minutes and make for the perfect snack or treat.  The base is made with rolled oats and creamy peanut butter and then topped with melted dark chocolate, a true delight!
One of my all-time fave combos - chocolate and peanut butter! Plus they are no bake so you don’t have to worry about messing with the oven! They are best served old straight from the fridge. The no baking part also means they are a lot faster to make and less fuss. Did I mention they taste freaking amazing.  
As well as being really easy to make, these cups are healthier than your average treat as they are made with wholesome REAL food ingredients.
They are ideal for a grab and go breakfast – a quick and delicious way for you to mix up your morning oats. Porridge will be a thing of the past once you try these, trust me. These little bites of peanut-buttery goodness are the best way to get your day off to a good start.
This recipe is so simple to make. Simply mix up the ingredients in a bowl. Divide the mixture up into 10 muffins slots. Freeze for at least 2 hours. Then get your peanut butter chocolate mixture going, melted in a small pot on LOW heat. Top with the chocolate and some flaky salt, freeze some more and enjoy!
The whole family LOVED these little cups; they were gone in under 24 hours. They give off serious Reese’s Peanut Butter Cups vibes but way more healthy and delicious. With only 6 ingredients that you most likely have in your pantry already – these NEED to be made!

Ingredients

  • 1 cup oats, instant or quick
  • 1/4 cup almond flour
  • 1 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Topping

  • 1/2 cup chocolate chips
  • 2 tablespoons peanut butter
  • Flaky sea salt

Instructions

  • Place paper liners in 10 slots in a muffin pan or use silicone muffin cups.
    In a medium bowl, mix together the oats, almond flour, peanut butter, honey and vanilla. Transfer to the lined muffin pan and divide the mixture up evenly amongst the 10 slots. Flatten out as best as possible. Freeze the tray for at least 2 hours.

Chocolate Topping

  • In a small pot over low heat, melt the chocolate chips and peanut butter, stirring constantly until smooth and melted. Remove the muffin tray from the freezer and drop about 1-2 tablespoons of chocolate on the top of each cup and smooth out flat.
    Sprinkle with the flaky salt and freeze for another hour.
    Store in an airtight container in the freezer.
