Peanut Butter No-Bake Cookies

These peanut butter cookies are sweet, nutty, chewy, and delicious. Made with just 7 ingredients, they are an easy dessert or any time treat!
Just when you thought there was no way to improve on a classic peanut butter cookie here is the recipe. These cookies are the stuff of dreams.
Sometimes you just want a simple dessert and when those cravings strike, reach for this peanut butter no bake cookies recipe. These treats are a bit like fudge in consistency, but with the wonderful chewiness of oats.
They are perfectly sweet and richly peanut butter, balanced with warm hints of vanilla. They come together very quickly and satisfy the cookie, fudge and quick snack craving!
This recipe is so easy that even your kiddos can make them. All you do is mix the ingredients together, add them to a baking sheet and let them harden.
These babies are chewy, nutty, decorated with a pretty cross hatch pattern then dipped in melted chocolate for a dreamy combination.
They come together in no time at all and require no baking. It all starts with some peanut butter, which just needs to be stirred together with some coconut flour, honey, oats, vanilla and you are done!
These would make the perfect snack or dessert when you need something that’s on the healthier side fast. I could see these making great gifts. Or make in a large batch and keep them in the freezer so there’s always a healthier treat on hand!

Ingredients

  • 1 cup coconut or almond flour
  • 1/2 cup oats, instant or quick
  • 1/2 cup peanut butter
  • 2 tablespoons honey or maple syrup
  • 1/2 teaspoon vanilla extract

Chocolate Coating

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Topping

  • sprinkle sea salt
  • crushed peanuts, optional

Instructions

  • Place the flour, oats, peanut butter, vanilla, and honey in a bowl and mix everything together.
    Using a scoop or a spoon, divide the dough into 10 equal portions and roll it out into balls and place them on a lined baking sheet.
    Use the back of a fork to press down in criss-cross pattern and put them into the refrigerator to chill for 20 to 25 minutes while you melt the chocolate chips.
    Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Then dip each of these cookies into melted chocolate. You can dip half, or full or drizzle over the cookies.
    Sprinkle with salt and add optional crushed peanuts on top for crunchy texture.
    Then chill cookies for 20 minutes until the chocolate sets and serve.
    Store refrigerated for up to 5 days.
    You can also store them in the freezer. Just keep them in a resealable freezer-safe bag. They will stay fresh in the freezer for up to 6 months.
