White Chocolate Cranberry & Pecan Clusters

In spite of its simplicity, this is a very popular homemade healthy candy recipe.
These nut clusters are amazingly yummy, crunchy, and perfectly sweetened - yep, even without sugar. If you are looking for one of the simplest and best snack or dessert recipes there is, look no further,because this cranberry and pecan cluster recipe is one of them.
The recipe combines pecans, cranberries and a smooth white chocolate sauce to form a delicious nutty-crunchy party in your mouth.
Also, on top of all that awesomeness, all you need is just a few minutes, and 4 ingredients to make them and then you just have to wait for them to harden up in the freezer.
Now, I used pecans and cranberries to make these clusters. But you can actually use any nuts you want! You can also add raisins, dates, apricots or dried pineapple, whatever you like!
Make your own creation but whatever you put in them, you can bank of it that these delicious clusters will be sweet, salty, nutty and crunchy, and incredibly delicious. Everyone who tries them, thinks they are amazing. 
Personally, I love using them in place of a protein bar for a low carb snack. But, they also make a great quick breakfast or even dessert! They are also SO good broken up and sprinkled on my oats or smoothie bowl in the morning. They are a handy tool to satisfy my craving for a sweet-savory treat in the afternoon.
They also make standout gifts - box them up with each cluster in its own foil or paper candy cup.

Ingredients

  • 2 cups white chocolate chips 
  • 1 1/2 tablespoons coconut oil
  • 1 cup dried cranberries 
  • 1 cup pecans, chopped 
  • 1 teaspoon vanilla extract   

Instructions

  • Place chocolate chips and coconut oil in medium microwave friendly bowl or dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Now mix in other ingredients: Stir in the dried cranberries, chopped pecans and vanilla extract into the melted chocolate until everything is well coated with the chocolate.
    Now form the clusters: Line a baking sheet with parchment paper. Using a spoon, drop tablespoon sized dollops of the mixture onto the prepared baking sheet, forming clusters. Makes about 24 clusters depending on size.
    You can also drop spoonful’s into pretty cupcake liners or into a silicone muffin pan.
    Finally, chill to set: Place the baking sheet in the refrigerator for about 30 minutes, or until the chocolate has hardened.
