My lemon raspberry protein-rich fat bombs are so good, they are like having candy! They make a great snack or after-dinner treat that satisfies your cravings for something sweet without a sugar crash. The combination of coconut butter with the tartness of the raspberries makes for a decadent fat bomb that really feels like you are having a chocolate truffle!

Don’t know what fat bombs are? They are little low sugar, keto friendly treats mostly made of healthy fats, and are super popular in the low carb-high fat camp. Or those that follow a ketogenic diet. This is another fabulous snack recipe doing the rounds of social media. You may have even seen them yourself becoming viral. Bursting with deliciousness, this recipe not only gives you the extra healthy fat your body craves, it also creates desserts or healthy snacks the whole family will love.

Who doesn’t love the combination of raspberry and coconut?! Each is great, but they are better together. They are a match made in heaven, and you can still enjoy the marriage without all of those pesky carbs getting in the way. Berry nice, coconutty and slightly sweet and yes, the name for these babies are Fat Bombs. With the popularity of the Keto diet, fat bombs have become the ultimate keto candy.

As a long term fitness professional who is immersed in the health and wellness field, it’s fun to keep tabs on the latest trends. Traditionally, many trends over the last decade or more have (unfortunately) revolved around elimination diets in which certain foods or food groups are restricted or eliminated entirely. Think grains, dairy, carbs, fats, meat and so on. In their place came foods marketed as low-calorie, low-fat, low-this, low-that were usually interpreted by novice consumers to mean “healthy”, right?

However, we are now finally starting to see a paradigm shift. People are beginning to change their mindset around food and paying closer attention to not only the nutrition label, but also the ingredients. Consumers are becoming more interested in ADDING more nutritious ingredients to their diet, as opposed to eliminating foods or entire food groups. What perhaps is even more exciting is that fat is no longer demonized. Items like coconut oil, avocado oil, and nut butters and nut flours are being used more widely for their nutritional benefits with less emphasis on their caloric value.

Healthy fats are in and the demon sugar is out due to sending your blood sugar levels on an unhealthy roller coaster ride every time you eat it. This is one of the most important things causing an epidemic of obesity and “lifestyle” preventable diseases. Low carb, no-bake treats such as fat bombs are typically made with ingredients such as nut/seed butters, coconut cream, coconut butter or oil, cream cheese, butter, heavy cream, mascarpone cheese, olive oil, dark chocolate, avocado and little to no sugar to name a few.

They are called fat bombs because they incorporate healthy fats into desserts and snacks to keep you satiated between meals. They are easily portion controlled, and the richness of the healthy fats is very satiating to the taste buds. Oh, and did I mention they are easy to make? They only take a few minutes, so they are great to keep in mind for those times when you need a really fast dessert or sweet healthy treat.

Are fat bombs healthy? I know people have very different views on how much fat to eat in a day, so while my own diet is pretty high in healthy fat it will of course depend on your own personal views and dietary needs. People trying to reduce their sugar intake often complain about the lack of sweets in their quest to get healthier. That is because the low-carb way of eating is very focused on eliminating harmful sugar from your diet. But there are options for that lingering sweet tooth in your life.

Fat bombs are the perfect snack for anyone who tends to like desserts that are rich and delicious but not super sweet. Since they are so low in sugar, they are great for eating any time of the day, either on their own or as part of a meal – breakfast, afternoon, post-workout, or as a nighttime healthy snack instead of  potato chips or ice cream.

You will discover these fat bombs are BURSTING with flavor! The way the raspberries blend so perfectly with the coconut makes them taste like something really naughty. Except they fill you up and don’t make your blood sugar levels go wacko! As with anything, moderation is key for these, but they are so filling that it’s much easier to feel satisfied even after just a small amount.

Lemon Raspberry Protein Fat Bombs

Freeze-dried raspberries give these fat bombs such a burst of berry flavor and sweetness! These are keto-friendly treats made with coconut butter, freeze-dried raspberries and a hit of protein. You will love this creamy truffle-like combination.

Ingredients

Lemon Layer

  • 1/2 cup coconut butter – store bought or recipe below in notes
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 1 lemon, juice and zest
  • 1 tablespoon honey or maple syrup

Raspberry Layer

  • 1/2 cup coconut butter – store bought or recipe below in notes
  • 1/2 cup freeze-dried raspberries
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon coconut oil, melted
  • 1/4 cup any milk

Instructions

  • Place 6 paper liners in a muffin pan or use a silicon muffin pan or mold for easy removal.

Lemon Layer

  • Soften the coconut butter by placing the jar in some hot water. Or a give the jar a couple of 10 second bursts in the microwave.
    In a small bowl stir together the lemon layer ingredients.
    Divide the lemon mixture between 6 muffin cups, to about ½ full.
    Place in fridge while you make the raspberry layer.

Raspberry Layer

  • As above, soften the coconut butter by placing the jar in some hot water. Or a give the jar a couple of 10 second bursts in the microwave.
    Add all of raspberry layer ingredients to a food processor and blend until smooth.
    Divide the mixture among the muffin cups, adding the raspberry mixture on top of the lemon layer pressing down to combine the two.
    Store in an airtight container, frozen for up to 1 month or covered and chilled for up to 7 days.
