Today we are making the cutest lemon cashew bites! All the lusciousness of cheesecake, but more fun and a little healthier. Plus, kids (and adults) seem to love anything small and easy to hold, so these are sure to be a hit! Made with cashews, yogurt and all good stuff and I have to share these with you because they might just be my new favorite thing ever.

If you are anything like me and obsessed with all things lemon, you are going to be hooked. I have eaten one every night this week after dinner. I plan to make a bigger batch and serve these as a healthy dessert for my family.

This recipe makes a delicious snack or dessert. Made with simple ingredients they come together in minutes. Great for rocking up to a pot luck, b-b-q or family gathering with. They will WOW your guests! Or you can make them for your family or just yourself keeping them in the freezer for the perfect single serve dessert, snack or even breakfast to have prepped in your fridge.

I mean, who doesn’t love lemon?! Now, I LOVE lemon. And these babies are like a lemon lover’s dream. So much tang, so much sweet, and so much beautifully decadent bites of L E M O N.

Food processor no bake desserts are pretty much at the top of my list for favorite treats to make. I think it’s mostly because I love creamy desserts (cashew cheesecake is my favoriiiite!). And I love using my food processor to make life easier! That paired with my impatience to wait to eat dessert + my love affair for easy recipes pretty much makes me the perfect candidate for these lemon blueberry cashew protein cups! And holy yum, these are gooood!

I love everything about them. Maybe I am biased, but biting into the creamy center and the tang that bursts in your mouth… gimme seconds!

For big on flavor and easy to make sweet treats, you can’t go past these no bake delights. Add it to your dessert menu for easy entertaining! After all, when it comes to cooking, we spend so much time in our kitchens whipping up everyday meals. So a delicious dessert that you can create quickly and easily is always a welcoming addition to the menu.

These tangy, creamy, protein-rich lemon blueberry cups are honestly to die for. They are light, refreshing, and the perfect little treat when you are craving something sweet but want to stay on track with your healthy eating plan. I have been trying to get my 100 grams of protein in daily, and these delicious cheesecakes pack a whopping 17 grams.

You can also make these them a day ahead and decorate with beautiful toppings just before serving. I love that you are not left with a whole cheesecake on your hands when you only wanted a single serving which makes it great for portion control. You can simply take out 1 (or 2) of these babies and that is your healthy end to a meal.

As well as being great for dessert, they are also great as an afternoon snack, a post-workout meal, or just whenever that sweet tooth hits. The hardest part is waiting to eat them while letting them chill in the fridge. I made them in the morning and let them set. I also noticed they only got better over time after sitting in the fridge longer.

Another plus is you can customize these to your liking and make a ton of different flavors. Although lemon for me is perfect and would take a lot of beating.

I suggest you also make a double batch of the delicious blueberry swirl too. Often to turn something from good to great all it takes is minimal effort. This easy blueberry swirl is one of those things to kick your plain yogurt, oatmeal or smoothie bowl up a delicious and nutritious level or two!

Lemon Blueberry Cashew Protein Cups

These gorgeous lemon blueberry cashew protein cups have three components: a nutty base crust sweetened with dates, a layer of creamy lemon filling and lastly a blueberry swirl on top plus the option for a dollop of whipped coconut cream. Oh my! This is how to impress your dinner guests.

Ingredients

Blueberry Swirl

  • 1 cup blueberries, fresh or frozen
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon water
  • 1 teaspoon fresh lemon juice

Base Crust

  • 1 cup almonds or walnuts or a mix
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon vanilla extract

Creamy Lemon Filling

  • 1 cup cashews, soaked 3+ hours and drained
  • 1 cup thick Greek-style yogurt, plain or vanilla
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/4 cup protein or collagen peptides powder
  • 2 tablespoons honey or maple syrup
  • 1-2 lemons, juice and zest (depending on how lemony you like it)

Toppings Optional

  • Dollop of whipped coconut cream – recipe below in notes
  • Fresh blueberries
  • Lemon zest

Instructions

  • Note: Place the can of coconut cream in the fridge or freezer for at least 1-2 hours before making these cashew cups to allow coconut cream to separate.

Blueberry Swirl

  • Make this first so its cool when you need to top the lemon cups with it.
    In a small pot or saucepan, combine berries, water and lemon juice. Simmer over medium heat and mash the berries with a fork to break them up.
    Taste for sweetness and add honey or your favorite natural sweetener and simmer until most liquid is absorbed.
    Allow to cool completely and store in a mason jar or small glass container until you use.
    Note: Its great to stir into yogurt, oatmeal or a smoothie or smoothie bowl. Will keep in the fridge for up to 1 week.

Base Crust

  • Place parchment paper liners in a 12-hole muffin pan or use a silicon muffin pan for easy removal.
    In a food processor blend all ingredients for the crust until broken down and crumbly and it reaches a coarse consistency - if you pinch it, it should stick together in your fingers.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your base crusts.
    Press around 1/2 tablespoon of the mixture in the bottom of each of the 12-muffin cavities. Just divide the mixture up between them and smooth out evenly with the back of a spoon.
    Refrigerate while you prepare the filling.

Creamy Lemon Filling

  • Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Place all filling ingredients, cashews, yogurt, hardened coconut cream, protein powder, honey, lemon juice and zest into the food processor and process until smooth and creamy.
    Depending on the power of your blender this might take a few minutes. Stop blending to scrape the sides and continue to blend until very smooth. Taste test add more honey or lemon if you think it needs it.
    Spoon the filling over the chilled base crusts (divide the filling between the 12 muffin cavities) and spread evenly with the back of a spoon.

Blueberry Swirl

  • Evenly distribute the blueberry swirl mixture on top of each cup (about 1 teaspoon for each) and swirl with a toothpick or knife.
    Chill in the freezer for 4-12 hours until firm - more or less time depending on the desired consistency.
