Kiwi Chia Pudding
Chia seeds are nutritionally dense seeds that will thicken any liquid you add them to. Mix them up with plant-based (or dairy) milks and you have an almost instant pudding with a tapioca-like texture and gently sweet flavor.This recipe is meant for breakfast and is the perfect make-ahead option for busy mornings! But if you add a little more honey to the seeds as they swell, it will be sweet enough for dessert. It's creamy, delicious, filled with protein, fiber, and healthy fats. Super healthy and indulgent enough to enjoy for a snack anytime too. You can use either black or white chia seeds, or a mix. The pudding will continue to thicken as its sits, so feel free to thin it out to taste with a little more milk before serving.

Ingredients
- 2 tablespoons chia seeds
- 1/2 cup milk of choice
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 cup kiwi fruit, diced
- 1 teaspoon coconut flakes
- Berries to top
Instructions
- In a small bowl, combine the chia seeds and milktogether. Stir very well to avoid any chunks.Add the honey and vanilla extract. Mix everything very well.Cover the bowl and refrigerate for 4-5 hours (or overnight).When the chia pudding is ready to be served, add the diced kiwi fruit (or puree it in a food processor for a smoother pudding).Mix the kiwi and chia pudding together.In a small glass (or dessert dish), pour the chia pudding and top the pudding with coconut flakes and berries.
