If there’s anything that can make a dessert more adorable, it’s miniaturization, and making mini versions of a rich, creamy, decadent cheesecake is no exception. By using an ice cube tray as the mold for mini desserts, it’s super simple to make your own mini-cheesecakes that are as delicious as they are cute.

As if cheesecake itself wasn’t perfect enough, someone thought up mini cheesecakes, and you guys, I’ve been obsessed with them ever since. They are so delicious and so versatile, and I’m sure once you try them, you will find it hard to keep from whipping up a batch regularly.

Sweet, creamy, and satisfying, these individual “bites” of cheesecake are actually a decent source of protein, thanks to the cream cheese, yogurt and some protein powder. They can be flavored in many tasty ways, too!

All the sweetness and richness of cheesecake, but more fun and guilt-free for your healthy eating plan. These mini cheesecakes are the perfect bite-size for parties or for a daily sweet treat to end your long day.  And since they are frozen, you can just eat what you want and save the rest for later.

Sometimes you just need a ‘lil something’ at the end of a meal to signal that its time to stop eating.  These bad boys are perfect for that!

The ingredients for these mini cheesecake bites are all basic, easy-to-find items that come together in a snap with a mixer or a blender. That makes it super easy to stir up a batch on the fly!

How hard is it to normally make cheesecake? Some traditional cheesecake recipes can be very challenging, but this easy version is quick. Just stir it up and freeze! Doesn’t get any easier than that!

Ice Cube Tray Cheesecake Protein Bites

Ingredients

Base Crust

  • 1 cup almond flour
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons coconut oil, melted

Cheesecake Filling

  • 1 cup cream cheese, softened
  • 1/2 cup Greek-style yogurt, plain, unsweetened
  • 2 scoops protein or collagen peptides powder
  • 2 tablespoon honey or maple syrup
  • 1 lemon, juice and zest
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Optional Add Ins Or Toppings

  • 1/2 cup chopped nuts, walnuts, almonds, pecans,
  • 1 cup chopped fresh fruit or berries
  • Mini dark chocolate chips,
  • Flaky salt

Instructions

Base Crust

  • Add almond flour, honey and coconut oil to a small bowl and mix until well combined.
    Once well mixed, spoon a small amount into each of the 20 ice cube cups.
    Press the crumbs down to make a firm crust, thick enough that it sticks together, but thin enough to leave lots of room for the cheesecake filling.

Cheesecake Filling

  • Start by bringing the cream cheese to room temperature. Either leave it out for a few hours or put it in a bowl and microwave it for a few 10-second intervals.
    Once slightly soft, beat the cream cheese with a mixer. I used a hand mixer, but a stand mixer would work well too. Beat it until smooth and creamy – it may take a few minutes.
    Now add yogurt, protein powder, honey, lemon juice and zest, coconut oil and vanilla extract and continue to beat with a mixer until everything is blended and creamy.
    Consistency of the batter should be thick, but pourable. If it’s too runny, you may mix in a little more protein powder. If too thick add a little milk or water a tablespoon at a time until it reaches the right consistency.
    Taste for sweetness and adjust accordingly. If you like, at this point, you can fold in some chopped nuts.
    Now spoon the cheesecake filling on top of the base crust, making sure to let it settle so no air bubbles form. Smooth the top a bit with a spoon or spatula.
    Sprinkle a few berries on top of each cheesecake bite. I used blueberries and strawberries, but any berry and most fruits would be delicious!
    I highly recommend adding a popsicle stick! Push them down into the center of each cheesecake bite before freezing, 3/4 of the way into each “bite” until they touch the crust (you don’t want to go through all the way).
    Freeze for 2+ hours, preferably overnight. Once frozen, remove by loosening a few sides with a thin butter knife and popping each cube out. Or another method is to put the bottom of the ice cube trays in hot water for just one minute and then popping out the bites.
    For easier serving, pop out all of the uneaten cheesecake bites and transfer them to a ziploc bag and store in the freezer.
    Thaw for a few minutes before eating for a nice creamy, melt-in-your-mouth consistency.
