Hemp Seed Energy Bars

A no bake snack bar created with only 8 ingredients that is also high protein. These bars with hemp seeds are filled with whole foods, free from gluten, refined sugar and absolutely addictive.
Hemp hearts (seeds) are the superstar here, they are the most nutritionally complete food source in the world, making them the perfect ingredient in a nutrition bar.
They are one of nature’s “perfect foods” providing all nine essential amino acids that are required by the body to build proteins.
These hemp seed bars make a delicious healthy grab and go breakfast, snack or dessert. Packed with protein, healthy fats, omega 3, vitamins, minerals and fibre, these bars will give you a huge boost of both nutrients and energy.
A great bar before or after a workout, packed with real food ingredients! The combination of hemp seeds, oats, and sweetened with dates makes for a chewy, delicious treat. They are the perfect plant-based no-bake dessert that can be prepared in under 10 minutes!
Hemp seeds also have the ideal ratio of omega-6 and omega 3 fatty acids.These days, we eat a ratio of 21:1, when we really need a ratio of 3:1. Luckily for us, hemp seeds contain omega fatty acids in exactly this ratio.
They are a rich source of heart-healthy fatty acids, essential vitamins and minerals, including vitamin E, phosphorus, potassium, sodium, magnesium, sulphur, calcium, iron and zinc.

Ingredients

  • 1 cup almonds or walnuts
  • 1 cup dates, soaked 30 minutes and drained
  • 1/2 vup hemp hearts (seeds) plus some extra for topping
  • 1/2 cup oats, instant or quick
  • 1/2 cup desiccated coconut
  • 1/4 cup coconut oil, melted
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla essence

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place almonds into a food processer and process until broken down and crumbly. Add dates, hemp seeds, oats, coconut, coconut oil, cocoa powder and vanilla and continue to process until mixture is well combined.
    Be careful not to over process as you want the texture to still be chunky with  larger pieces of nuts in it to add texture variance and different sized “bits” in your energy bars.
    Press the base mixture into the bottom of your pan or dish evenly. Top with more hemp seeds and press down so they stick while eating.
    Place the slice in the fridge to set and slice into 12 bars or more smaller squares. Keep the slice in the fridge for up to one week.
