Healthy No Bake Cookie Dough Bars

These are the BEST cookie dough bars you will ever try! Made with just six ingredients, they are an easy no-bake treat to satisfy any sweet tooth. Plus, they are gluten-free, soy-free, nut-free, refined sugar and oil-free so they are a healthy, allergen-friendly, feel-good treat.
They come together quickly and make the perfect snack.  With just a handful of ingredients. they take around five minutes to construct making them a really simple recipe to store in the freezer for a pick me up or quick burst of energy.
This recipe is a ‘healthified’ take on traditional sugar-loaded candy bars but made with wholesome ingredients. As well as being a much healthier version its also much easier to make!

These bars are crunchy, chewy, sweet, and salty all at once, and taste just like a candy bar. So easy to throw together. Simply mix almond and coconut flour, add some coconut oil, honey and chocolate chunks, freeze, then enjoy! You can also roll the dough into balls if you don't wish to make them into bar form.
Make these Cookie Dough Bars even healthier by adding a handful of nuts, seeds or old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of hemp or chia seeds or ground flaxseed.
Every time I make this recipe, it doesn’t last in my house for more than two days. My family just can’t get enough of it!

Ingredients

  • 2 cups finely ground, blanched almond flour
  • 1/4 cup coconut flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 teaspoons vanilla extract
  • 1/4 cup chocolate chips

Chocolate Topping

  • 1/2 cup chocolate chips
  • 1/4 cup + 1 tablespoon creamy almond butter

Instructions

  • Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting. Set aside.
    In a medium bowl, mix together almond flour, coconut flour, honey, coconut oil and vanilla to a medium bowl. Using a rubber spatula, stir and fold until thickened and well incorporated. Fold in chocolate chips.
    Transfer cookie dough into the prepared baking pan. Using a rubber spatula, smooth into an even layer. Set aside.
     

Chocolate Topping

  • Place chocolate chips and peanut butter in small dish and microwave at 50% power with 30 second bursts, stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the peanut butter together.
    Pour topping over cookie dough bars. Using a spatula or back of a spoon, smooth into an even layer. Optionally, make swirls on top for fun!
    Transfer pan to freezer. Chill for 20-30 minutes, or until firm. Remove from freezer and slice into 16 bars or smaller squares.
    Store in fridge for up to a week or in freezer for up to 3 months.
