Healthy Blueberry Coconut Protein Fudge
Ingredients
- 1 cup blueberries (fresh or frozen)
- 1/2 cup coconut butter store bought or homemade recipe below in notes
- 1/4 cup desiccated coconut
- 1 scoop vanilla protein powder
- 2-3 tablespoons honey or maple syrup (to taste)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- If you are going to make your own homemade coconut butter, make this first so its ready when you wish to make the fudge. Recipe link below in notes.Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.Add blueberries, coconut butter, protein powder, honey, vanilla and salt to a food processor and process until well combined.Stir in shredded coconut.Scoop the mixture out into the lined pan, smooth the top and sprinkle with extra coconut if desired. Freeze for 2–3 hours, or until firm.Slice into 12-16 squares to serve.Store in fridge for up to1 week or freezer for up to 3 months.
