Healthy Almond Cookie Bars

Grain-free, sugar-free, low-carb almond cookie bars only require 6 ingredients and one bowl! No eggs or baking required!
These delicious, no bake bars come together quickly and make the perfect snack. You only need a handful of easy to find ingredients and they take around five minutes to construct making them a really simple recipe to store in the freezer for a quick burst of energy.
This recipe is a ‘healthified’ take on traditional sugar-loaded candy bars but made with wholesome ingredients.  For those days where you are craving a candy bar, but want a healthy, delicious, low-effort way to enjoy the same sweet treat, I’ve got you covered with this recipe that tastes way better than any store bought version.
These bars are crunchy, chewy, sweet, and salty all at once, and taste just like a candy bar.So easy to throw together. Simply blend up some almond flour and butter, add some coconut oil, honey and chocolate chunks, freeze, then enjoy!
You can also roll the dough into balls if you don't wish to make them into bar form. Make these almond bars even healthier by adding a handful of nuts, seeds or old-fashioned oats to add texture and nutrition. Even better, add a tablespoon of hemp, chia seeds or ground flaxseed.
Every time I make this recipe, it doesn’t last in my house for more than two days. My family just can’t get enough of it!

Ingredients

  • 1 cup almond flour
  • 1/2 cup almond butter
  • 1/4 cup coconut oil
  • 2-3 tablespoons tablespoons honey or maple syrup (to taste)
  • 1/2 cup chocolate chips
  • 1 teaspoon vanilla extract

Instructions

  • Line an 9 x 5” loaf pan or similar sized dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Add the almond butter and coconut oil to a medium mixing bowl and microwave it at 50% power for 20 to 30 seconds, or until softened. You want these ingredients to be very soft (or melted) so that they stir easily.
    Add the remaining ingredients except the chocolate chips to the mixing bowl and stir until well-combined. Once the dough is well-mixed, fold in the chocolate chips. Note: make sure the mixture is cool otherwise the chocolate chips will melt.
    Transfer the cookie dough to the lined pan and freeze for 1 hour. When you are ready to serve, thaw, then use a sharp knife to cut 12 bars or more smaller squares.
    Store leftovers in the refrigerator for up to 1 week or freezer in a sealed container or bag for up to 3 months.
