This quick and easy recipe for sprinkle cookies is soft, chewy, and is dripping  with colourful rainbow sprinkles! I’m a firm believer that everything is better with sprinkles!

One of my all-time favorite kinds of healthy cookies are Funfetti! First of all, healthy no bake cookie dough is sooo easy to make, and the addition of rainbow sprinkles just takes them to another level.

Second, you can never go wrong with cookies. If you haven’t guessed it already, today I am sharing my favorite healthy no bake cookie recipe AND a way to transform them into rainbow sprinkle cookies!

And since we are all about one-upping ourselves, imagine how incredible these would be with ice cream sandwiched in between them. I’m drooling just thinking about it!

These no bake cookies are healthier than traditional cookies. The cookies need only 5 ingredients plus sprinkles and don’t contain any wheat flour, dairy butter, eggs or refined sugar. The cookies are easy to make and store well.

These classic cookies blend coconut flour with smooth creamy cashew butter, super healthy coconut oil and sweetened with maple syrup. A splash of vanilla completes the recipe for a quick, easy, and timeless treat. Always a favorite!

They are so easy to make and are the most fun birthday or holiday dessert to make and share with children. When I need a quick and colorful dessert for birthday parties, I make my healthy no bake unicorn sprinkle cookies.

If you have got little girls in your house, there is a good chance they love unicorns. Unicorns are everywhere these days! No one can really escape this beloved mythical creature. Who even wants to try? Unicorns sure are fun for the imagination, especially with all the colorful rainbows and sparkles that usually accompany them!

Healthier Rainbow Sprinkle Cookies

Ingredients

  • 2 cup cashew (or any other nut or seed) butter
  • 1 cup coconut flour
  • 1/4 cup maple syrup or honey
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • 2-4 tablespoons rainbow sprinkles

Instructions

  • Line a baking tray or large plate with parchment paper and set aside.
    In a medium mixing bowl, add coconut flour, cashew butter and maple syrup and mix until combined.
    If the batter seems too thin, add more coconut flour or if batter is too thick, add a little milk or water until it reaches the right consistency to hold together to shape into the cookies. Different brands of coconut flour absorb varying amounts of liquid.
    Using your hands, form 16 balls and place onto the parchment paper. Press each ball into a cookie shape. Top with sprinkles.
    Refrigerate for at least 30 minutes to firm up.
    These cookies should always be stored in the refrigerator as they will become quite soft when left at room temperature. They will keep well for up to one week.
    Place the cookies in an airtight container and store it in the freezer for up to 3 months.
