Healing Lemon & Ginger Gummies

These lemon, ginger and honey immune-boosting gummies are so good…a little bit sweet and a little bit sour.…and even a smidge like ginger beer.

Even though they claim to be fruit-flavored, there’s very little – if any at all – actual fruit in them. Gummy candies are filled with unhealthy ingredients with a list on the label that looks like this – sugar, sugar, corn syrup, sugar, red 40, blue 1, and yellow 5.
The good news is, homemade gummies can be made with real fruit and can be loaded with nutrients and so much better for you than store-bought. A great option for an easy and healthy all-natural snack with protein and no artificial junk in them! Easy to make and fun to eat!
Why eat gelatin gummies?
Gelatin makes up almost one-third of all the protein in our bodies and not having enough affects our joints, our skin and our gastro system.
Gelatin is a colorless and tasteless protein made from hydrolyzed collagen, which means it is part of the broken-down collagen. It provides important amino acids which are the building blocks of protein.

Lemon: While all citrus are packed with immune-boosting antioxidants from vitamin C, lemons are especially helpful. All those antioxidants help fight inflammation and improve the immune system. Honey: Speaking of being loaded with vitamin C, honey is as well! On top of that wonderful benefit, honey is full of B6, calcium, iron, and friendly bacteria. Ingredients

  • 2 cups water, divided
  • 1 inch chunk of fresh ginger root
  • 1/3 cup grass fed gelatin
  • 2-3 tablespoons honey
  • juice from 2 lemons (about 1/2 cup)
  • zest from 1 lemon (about a teaspoon)

Instructions

  • Place lemon juice and one cup of water in a medium pot and bring to the boil. Remove from heat and add grated ginger. Leave to infuse for 5 minutes.
    While ginger is infusing, pour the remaining cup of water into a bowl. Sprinkle over gelatin and let stand for 10 minutes for the gelatin to “bloom”. This step is important to soften the gelatin so it dissolves quicker and better when mixed into the main gummy ingredients.
    When ginger has infused, strain into a jug or bowl, removing ginger sediment.
    Transfer the bloomed gelatin mixture into the ginger-lemon water and whisk until completely dissolved and free of lumps.
    Stir in the honey. Taste for sweetness and adjust to your taste.
    Pour into molds or into a glass/ceramic dish. Place into the fridge until set.
    Remove from mold and cut into squares. Store in a container in the fridge and consume within about 5 days.
