Funfetti Protein Bars
Ingredients
- 2 cups oat flour (rolled oats blended to a flour)
- 1 cup almond flour
- 1/2 cup protein or collagen powder
- 1/2 cup cashew or almond butter
- 1/2 cup honey or maple syrup
- 1/4 cup almond (or your choice) milk, plus more if needed
- 1 tablespoon vanilla extract
Topping
- 2 tablespoons sprinkles
Instructions
- Line a 7 x 5-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Mix flours and protein powder in a bowl.Mix nut butter and honey in a small dish and heat in microwave roughly 30 seconds. Add to dry mix. Add vanilla and milk and continue stirring until a batter forms.If the batter seems a bit dry, add more milk a tablespoon at a time until it comes together into a dough like mixture.Transfer dough to lined baking dish and spread out with a spatula or back of a spoon to create an even layer.Press sprinkles into the top and refrigerate for 30 minutes or until firm.Cut into 10 bars or more smaller squares and store in the fridge for up to one week or freezer up to 3 months.
