Fudgy Thin Mint Chocolate Protein Cookies

These Healthy Thin Mint Cookies are gluten free, vegan, and taste and smell JUST like the traditional Girl Scout cookies. They are made with less than ten ingredients and don’t require any baking!

Ingredients

  • 3/4 cup chocolate protein powder
  • 1/2 cup almond flour
  • 1/3 cup oat flour (oats blended to a flour) (may need to add a little more if dough too wet)
  • 1/3 cup cocoa powder
  • 2 tablespoons honey or maple syrup
  • 1/3 cup milk of choice (add more if needed)
  • 1/4 cup almond butter
  • 1 teaspoon peppermint extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • In a large mixing bowl, combine the chocolate protein powder, peppermint extract, oat flour, cocoa powder and almond flour. mix until well combined.
    Add the honey, almond butter, and milk to the dry ingredients. mix until a thick, dough-like consistency forms. If the dough seems too dry add a little milk a tablespoon at a time until it comes together.
    Line a baking sheet with parchment paper. Using your hands, form the dough into 8 or more cookie shapes and place them onto the prepared baking sheet. place in the freezer for 1 hour.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove cookies from the freezer. Drop one at a time into the melted chocolate and use a fork to spin it until it’s evenly coated in chocolate.
    Return the coated cookie to the parchment-lined plate. Repeat with the remaining cookies.
    Transfer the baking sheet to the freezer allow the cookies to freeze for about 30 minutes, or until the chocolate coating has hardened.
    Once the chocolate coating is firm, remove the cookies from the freezer and enjoy!
