Indulgent, delicious and ‘healthified’ fudgy bites.Sometimes I look at my recipe blog/site and laugh that I dedicate so much of my time to a never ending stream of chocolate based snacks. I have zero issue with this achievement, nor do I plan to change it. Why would I? Chocolate is just the best and it deserves to nourish us in snack form.Plus, chocolate isn’t just good for the soul. It can be good for us nutritionally speaking, too. Don’t get me wrong - fudge is fudge, and I definitely place it in the snack category…but choose yourself a good quality, dark chocolate and pair it with whole food ingredients (like dates and cashew butter) and you have yourself nourishing fudge bites. This salted chocolate date fudge is chewy, rich, not too sweet and uses simple ingredients like dates, cashew butter, chocolate, vanilla and salt to make a melt in your mouth fudge! Rich, smooth and loaded with chocolate flavor. Delicious easy fudge that's made with better-for-you ingredients and without any fancy equipment. Ingredients
- 2 cups dates, soaked 30 minutes and drained
- 1 1/2 cups chocolate chips
- 1/2 cup cashew (or any other nut) butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon sea salt flakes
Instructions
- Line an 8 x 8” baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.Place chocolate chips in a small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips.Add dates to a food processor and blend until a paste forms - some small chunks are ok. Add vanilla and cashew butter, and blend until a thick paste forms. Transfer the date mixture into a bowl and pour through the chocolate. Fold together until uniform, then add the salt and gently fold through until combined.Transfer fudge to the lined pan. Use a clean spoon to smooth out, then sprinkle with extra sea salt flakes. Set in the fridge 2+ hours, then use a sharp knife to cut into 20 (or more) squares. Store in an air tight container in the fridge for up to 1 week or freezer for up to 3 months.
