Frozen Banana Snickers Protein Bites
Ingredients
- 2 large bananas, peeled, sliced into 1-inch slices
Date Caramel Protein Filling
- 1 1/2 cups dates, soaked 30 minutes and drained
- 1/2 cup peanut (or almond or cashew) butter
- 1/4 cup protein or collagen peptides powder, vanilla or chocolate
- 2-4 tablespoons any milk, as needed
- 1 teaspoon vanilla extract
- 1/8 teaspoon sea salt
Chocolate Topping
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- 1/2 cup peanuts, roasted, salted, crushed
Instructions
- Line a baking sheet with parchment paper. Note: Make sure it will fit in your freezer.You can either slice the bananas into thick rounds 1-inch thick for bites, or make 2 inch rectangles by slicing a thin strip along the top and bottom for “bars.” Place the thick slices or rectangles on the lined baking sheet.
Date Caramel Protein Filling
- Add the dates, peanut butter, protein powder,1 tablespoon milk, vanilla extract and salt to the food processor and process, adding more milk a tablespoon at a time if needed to get a smooth and creamy paste (a few lumps is fine!)Add a teaspoon dollop of caramel to each banana disc, and sprinkle crushed peanuts on top. Press down gently so they stick in the caramel. Now place the pan in the freezer for about an hour.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Take out your now frozen banana caramel bites and either dunk them in the chocolate mixture, and roll them around to coat evenly, or just dunk the bottom half and drizzle chocolate on top.
