These banana coconut bites are an easy, no bake recipe made with simple ingredients! Three delicious layers to create a rich, and creamy, healthy snack or dessert.

A crumbly nutty base, banana, coconut centre topped with melted chocolate. Sounds nom-nom-nom yummy, yes?

Normally little treats like this would be chocka with butter, loads of sugar, sweetened condensed milk, heavy cream, corn syrup and so on. I wanted to do away with all that unhealthy stuff and make my own healthier version and now have 12 adorable, small but mighty mini pies in my very own fridge.

Made with better for you ingredients, super easy to make, delicious, and pretty too. These bad boys taste way too good to believe it’s healthy, but they are! They are gluten-free (obviously), free from refined sugars, full of good fats, have a good amount of fibre and high in protein!

This are the little mini pies you make when you want to please EVERYONE. All natural ingredients and no nasties. In fact if you want to keep its extreme dietary friendliness to yourself you can do that too! No one will ever know. It’s as rich and decadent as a dessert can be.

I love mini anythings – especially cheesecake type, healthy snacks and treats made in a muffin pan. I certainly don’t need an entire cheesecake in the house, calling out to me to eat it, so mini snacks are better for those of us that have little will power!

These individual servings are perfect if you don’t want to run the risk of over indulging as they are so good its hard to stop at just one! After all, who can resist a dessert when it comes in such a cute little package?

The perfect portion-controlled treat for an any time healthy snack or dessert! Or any time you are craving a little something sweet but want to stay on track with your healthy eating plan. Just the ticket for satisfying your dessert cravings without going overboard.

So this is my extremely simple and tasty solution.

Great for any special occasion, these babies are a real crowd pleaser. Freeze them and take them out of the freezer at least 15 minutes before you want to serve. They hold their shape beautifully and the center is a lovely soft, creamy texture.

These little bites of love require just a handful of ingredients, NO oven time and really do curb those late night sweet cravings. Who knew that bananas, almonds and coconut could come together in such perfect harmony?

Frozen Almond Banana Coconut Bites

Frozen chocolate-y cups filled with a naturally sweet coconut and banana filling - melt in your mouth deliciousness.

Ingredients

Base Crust

  • 1 cup almonds, pecans or walnuts or a mix
  • 1/2 cup dates, soaked at least 30 minutes and drained
  • 1/2 cup desiccated coconut
  • 1 tablespoon cocoa powder

Banana Filling

  • 2 ripe bananas
  • 1 13.5 oz can coconut cream, full fat (solid part only) *see note below
  • 1/4 cup honey or maple syrup

Chocolate Topping

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

Base Crust

  • Note: Place the can of coconut cream or milk in the fridge or freezer for at least 1-2 hours before making these bars to allow coconut cream to separate.
    Line a 12-hole muffin pan with paper liners or use a silicon muffin pan.
    Add all base crust ingredients to a food processor and process until mixture is sticky and well combined.
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your base crust.
    Press a tablespoon of the base crust mixture into the bottom of each muffin cup and smooth out evenly with a spatula or back of a spoon. Simply divide up the mixture between the 12 muffin cups.
    Refrigerate while you prepare the filling.

Banana Filling

  • Open chilled can and scoop out the cream that has separated and set hard on the top. Save the remaining coconut water to use in a smoothie, drink, or discard.
    Add the bananas, coconut cream and honey to a food processor and process until smooth and creamy.
    Place a tablespoon of the banana, coconut mixture into the muffin cups on top of the base crust and smooth out evenly as above and dividing the mixture up between the 12 muffin cups.
     

Chocolate Topping

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Spoon around 1-2 teaspoons of melted chocolate on top of the banana filling on each of the 12 bites.
    Freeze until solid an hour or more.
    Store in freezer for up to 3 months and remove around 10 minutes before serving to soften a little before eating.
