Easy Peanut Coconut Clusters

Easy is the name of the game with these delightful little snacks. With only 5 ingredients and a few minutes to put together they are a perfect last minute treat for any occasion.
Loaded with healthy fats and have just the right amount of sweetness for a tasty treat that’s perfect for satisfying sweet and salty cravings!

I got the idea for these after seeing the nut clusters going viral on TikTok. I love how amazing new food trends are being created on internet websites like TikTok and some of them go viral and get loads of attention.
This recipe is one of them, making a huge buzz around healthy treats. I have tried a few of these viral TikTok recipes recently and they do not disappoint. Its not every day that a food trend exceeds my expectations, but this one is definitely a winner.

When I made these for my family they could not get enough of them. The first tray of eight clusters was gone in minutes and I was right back in the kitchen making more. The best part is I didn’t mind because these nut clusters are so easy to make.
Aside from the time it takes to chill these treats they only take a few minutes of preparation and they can be enjoyed.
The coolest thing about these clusters is that you can mix and match any nuts or fruit with any chocolate.  You can use white, dark or semi-sweet chocolate for example. The options are endless and I’m sure they will be delicious whatever option you choose. A healthy dessert or snack option that your whole family will love!
This is your reminder that making healthy desserts and snacks dessert does not have to require a ton of ingredients and a whole lot of effort. This is the perfect recipe for simple and easy peasy.
My family love these clusters. I started making them about 6 years ago and they were an instant hit for all of us. A little salty, a little sweet, and with a delicious crunch, they check all the boxes for a quick treat or a last minute holiday gift.

Ingredients

  • 1/4 cup white chocolate chips
  • 2 tablespoons peanut (or any other nut) butter
  • 1/2 cup peanuts, roasted, roughly chopped
  • 1/2 cup desiccated coconut
  • 1 1/2 teaspoons coconut oil, divided
  • 2 tablespoons dark chocolate chips

Instructions

  • Line a baking sheet with parchment paper or use a silicone baking mat. Set aside.
    Place white chocolate chips, peanut butter and 1 teaspoon coconut oil in medium size dish and microwave at 50% power with 20 second bursts stirring between each one until mostly melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, add the peanuts and stir until all the peanuts are coated.
    Spoon 6-8 small mounds of the cluster mixture onto the lined baking sheet.
    In a small microwave-safe bowl, add the dark chocolate chips and the ½ teaspoon of remaining coconut oil. Microwave in 15-second increments stirring in between until melted and smooth.
    Drizzle the melted chocolate over the peanut clusters.
    Freeze for 35-45 minutes until solid. Serve and enjoy!
    Store in a ziplock bag or airtight container in the freezer or refrigerator.
    This recipe makes a small batch, if you need more, just double or triple the recipe.
