Date Caramel Pinwheel Rolls

Ingredients
Base Layer
- 1 cup almond flour
- 1/2 cup cocoa powder
- 1/3 cup oat flour
- 1/3 cup almond butter
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
Caramel Filling
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup peanut butter
- 1/4 cup any milk
- 1/2 tablespoon vanilla extract
- Pinch of sea salt
Instructions
Base Layer
- In a food processor, combine the oat flour, almond flour, cocoa powder, almond butter, honey and vanilla extract.Blend until a thick dough forms. Note: If the dough is too dry and crumbly, add a tablespoon or more of milk or water at a time, until you reach the desired consistency, or if the dough is too thin, wet or sticky, add more oat flour, 1 tablespoon at a time, until it thickens up.Scoop out dough on a sheet of parchment paper and place another sheet of parchment paper on top of the dough. roll out the dough into a large rectangle to prevent sticking to the counter or rolling pin.The dough will need to be around ½ inch thick.
Caramel Filling
- In the same food processor (no need to wash it from the dough), combine the dates, peanut butter, milk, vanilla extract and sea salt and blend until a smooth mixture forms.Spread the prepared date mixture evenly onto the already rolled-out dough. Carefully roll up the dough into a log. Place the log in the freezer for 45 minutes until firm.Once firm, remove the roll from the freezer and slice into 15 (or more) individual pieces to serve, Store in the freezer but thaw before eating!
