What are Cosmic Brownies?
Cosmic brownies are a classic Little Debbie bakery item. According to their website, cosmic brownies are described as a “chewy brownie topped with fudge icing and colorful candy coated chocolate pieces.” They come individually wrapped and are super sweet and quite artificial tasting.
This recipe is a copycat, but enhanced with a richer flavor and healthier ingredients. They are moist, dense, chewy, and even better than the original Little Debbie dessert. The best part is that they couldn’t be easier to make and come together in a food processor.
You would never guess it by the decadent taste, but these no-bake brownies are secretly good for you. They are packed with nutrient-dense ingredients, like almond flour, walnuts, coconut cream and naturally sweetened with dates.
First, we create the brownie layer. Then, we will spread the creamy chocolate ganache on top. Last but not least, a handful of rainbow sprinkles complete the brownies. Everything comes together perfectly to create one out-of-this-world chocolate treat!

Thick, gooey, and packed with 8g of protein per serving, they are the perfect high-protein brownies to meal prep for the week or whip up when that chocolate craving hits. Oh, and did I mention they are completely guilt-free?

Cosmic Brownies Protein Bites
Ingredients
Brownie Layer
- 2 cups dates, soaked 30 minutes and drained
- 1 1/2 cups almond flour
- 1 cup walnuts or almonds
- 1/2 cup cocoa powder
- 1 teaspoon vanilla extract
Chocolate Ganache
- 2 cups chocolate chips
- 1 cup coconut cream, full fat
- 1 teaspoon vanilla extract
Topping
- 1/4 cup rainbow sprinkles
Instructions
Brownie Layer
- Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.In a food processor, add the almond flour, walnuts, cocoa power and vanilla extract. Blend until the walnuts are crumbled into a flour-like consistency. Add the dates and continue to blend until a sticky dough forms. Transfer brownie dough to the lined pan and spread evenly with a spatula or back of a spoon.Place in fridge while you make the chocolate ganache.
Chocolate Ganache
- In a bowl, add chocolate chips, and vanilla extract. Set aside.Open the can of coconut cream. Scoop all of the contents into another bowl (both the thick cream and the clear liquid underneath). Microwave for 1 minute 45 seconds, then whisk together to combine.Pour 1 cup over the bowl of chocolate chips and vanilla extract. Let sit for 1-2 minutes, then whisk together until smooth. If the chocolate chips are not fully melted, microwave for 15-30 seconds and whisk together again.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Pour chocolate ganache over the chilled brownie layer. Spread evenly with a spatula or back of a spoon. Sprinkle the rainbow sprinkles on top.Chill cosmic brownies in the fridge for 2 or more hours (or until the chocolate ganache sets).Gently lift the parchment paper out of the dish to remove the brownies. Slice into 16 squares. Store in the fridge for up to 1 week or freezer for up to 3 months.
