Looking for a no-bake cookie recipe that doesn’t include two cups of sugar? Try these healthy delicious cookies that are packed with flavor and texture!

Shredded coconut (toasted for more flavour), almond butter, your favorite protein powder and sweetened with dates instead of the truckloads of sugar normally found in traditional baked cookies.

I love to use dates as a base in most of my snack balls, no-bake bars, or if I need a natural sweetener in a cookie or frosting. They are little morsels of natural sugar and a great alternative to refined sugars. You don’t need many dates to make something sweet!

The dried fruit has a caramel-like sweetness that can also help reduce cravings for sugary snacks.  I’m always on the hunt though for creative ways to dress up my dates, and I just knew these cookies would be delicious. Soft and chewy without any of the guilt! Quick and easy to make and no oven required!

I am a major cookie fan. But I don’t necessarily want to eat a full-on cookie for a snack. Okay, I WANT to, but it’s probably better not to. At least, not on a daily basis. Enter these healthy no bake cookies (or, you know, at least healthier than a normal cookie – baked or not baked!).

This reinvented healthier no-bake cookie recipe is as yummy as the old-school original with coconut oil and no refined sugar. Impossible to resist, these decadent little no-bake cookies are, unfortunately, completely banned from my home starting now. Um, actually, can I take that back? Starting tomorrow.

Despite being a bit healthier than the classic no-bake cookie that’s been around for decades, I’m pretty sure they still don’t justify eating the entire batch. And I’m not kidding, I cannot stop snitching these things out of my refrigerator every time they somehow seem to appear again.

So best decision ever  – banning them as they are that darn good.

In fact, I personally think these healthy cookies are significantly better than traditional cookies, which I find to usually be achingly sweet. Given a choice between the two, I’d pick the healthy cookies recipe every single time.

They have better flavor, a much better texture, and you don’t need to feel as badly about eating more than one which is win win in my book! These coconut date cookies are sweet, nutty, chewy, and delicious. Made with just 7 ingredients, they are an easy dessert or any time treat!

Coconut Date Protein Cookies

Ingredients

  • 1 cup dates, soaked 30 minutes and drained
  • 1 cup coconut flakes, toasted for more flavour
  • 1/2 cup almond (or any nut or seed) butter
  • 2 scoops protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Chocolate Drizzle

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • To toast the coconut for extra flavour preheat the oven to 325° and toast for 5-10 minutes, stirring occasionally so it doesn’t burn, until lightly browned.
    Add the dates to a food processor and process until broken down into a paste. Its ok to have some date bits still left. It adds to the texture of the cookies.
    Transfer the mixture to a medium bowl and add the coconut, almond butter and protein powder. Stir to combine.
    Roll the mixture into twelve equal balls with the palms of your hands. Flatten the balls on a parchment lined baking sheet with the bottom of a glass.
    Cut a middle hole out of each (or use a straw to poke a hole) so it resembles a donut shape. Place the tray in the freezer for at least one hour before proceeding.
     

Chocolate Drizzle

  • Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.
     Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
     Remove the cookies from the freezer and dip the bottoms of the cookies in the melted chocolate and return them to the parchment paper. Use the remaining chocolate to drizzle over the tops of the cookies.
    Place the cookies in the refrigerator to harden for at least one hour. Store in the refrigerator in an airtight container.
    Will keep up to 1 week in fridge or up to 3 months in freezer.
