Coconut Cloud Smoothie
This smoothie is hands down the trendiest, hyped (and expensive) drink in Los Angeles right now. But you can make this TikTok-viral copycat smoothie at home for MUCH less than the normal 20 odd dollars a pop!This smoothie is a MUST try! It is a great mix of pineapple and creamy coconut. It also has avocado and collagen which is great for your skin. This smoothie is packed with super foods and tastes delicious. Not to mention, it looks insanely beautiful too!I first saw this smoothie all over TikTok as people ran to Erewhon to buy it. Erewhon is a grocery store in Los Angeles and since we don’t all have an Erewhon near us, its quite possible to recreate this Coconut Cloud Smoothie at home for a fraction of the price.. It’s made with almond milk, pineapple, banana, avocado, almond butter, collagen, vanilla, stevia, blue spirulina and coconut cream – a few of these ingredients have a hefty price tag on their own so we can see why a high price is justified.But you can make it yourself and here is a recipe for this stunning smoothie. It features spirulina, an incredible skin superfood that has amazing properties that reduce inflammation in the skin and neutralize free radicals that cause premature signs of aging.The Blue Spirulina powder has been added to give a pretty vibrant blue effect. It is a well-known antioxidant superfood, is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina (blue-green algae). It is rich in protein, vitamins, minerals, iron, carotenoids and antioxidants and helps protect cells from damage. It is freeze dried to preserve its natural colour and nutrients. You can get creative and add this beautiful nature product to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures! You can add it to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods. For light blue shades, use just a pinch and for a more brilliant blue, use up to the full teaspoon or more. Ingredients
- 1/2 cup whipped coconut cream, made from 1x 13.5 oz can coconut cream, full fat (solid part only) *see note below
- 3/4 cup almond milk
- 1/4 medium avocado, pitted, peeled and sliced
- 1 medium banana, sliced, frozen
- 1/2 cup pineapple, diced, frozen
- 1 tablespoon almond butter
- 1 teaspoon blue spirulina powder, divided
- 2 tablespoons collagen peptides
- 1/2 teaspoon vanilla extract
- 2 drops stevia (optional)
- 1/2 cup ice
Instructions
- First, make the whipped coconut cream as it’s a feature in the smoothie, on the bottom of the glass, in the drink itself, and as a topping.Place the 1 x 13.5 oz can of coconut cream in the fridge or freezer for at least 1-2 hours before making this smoothie to allow coconut cream to separate.Open chilled can and scoop out the cream that has separated and set hard on the top leaving the coconut “water” in the bottom of the can. Save the remaining coconut water to use in a smoothie, drink, or discard.Scoop or spoon it into a stand mixer fitted with the whisk attachment. Beat on high speed until it begins to thicken and peaks form. Be careful not to overmix here, as it could heat the cream and cause it to soften!Optional - Whip in 1-2 tablespoons of honey and a teaspoon of vanilla.Place in the fridge until ready to use.
Make Smoothie
- Sprinkle in ½ teaspoon of blue spirulina powder down the inside of the glass you are going to use for the smoothie.Add 2 tablespoons of the whipped coconut cream to the bottom of the serving glass and reserve 2 tablespoons to top the smoothie.Place the rest of the coconut cream into a blender along with the almond milk, avocado, banana, pineapple, almond butter, ½ teaspoon of blue spirulina powder, vanilla and peptides, stevia (optional) with the ice.Blend on high until smooth.Pour into the serving glass and top with the reserved whipped coconut cream. Enjoy!
