Coconut & Cashew Vanilla Fudge

Ingredients
- 1/2 cup coconut butter- store-bought or recipe below in notes
- 1/2 cup cashew nut butter
- 1/4 cup coconut oil
- 3 tablespoons honey or maple syrup
- 1 1/2 teaspoons vanilla extract
Instructions
- Line an 5 x 7” loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.Place all ingredients together in small saucepan and place on the element on low heat. Stir continuously until everything has melted. This won't take long! Pour into the lined container and leave to set in the freezer for an hour or the fridge until set, then cut into 10-12 or more smaller squares. These fudge squares should be stored in the refrigerator, covered and will keep well for up to 4 weeks.To freeze: Place leftovers in a zip lock bag and store it in the freezer for up to 6 months.
