Coconut Cashew Pineapple Bites

I'm excited to share with you one of my favorite energy bites recipes made with naturally sweet and juicy, pineapple. Say what?? Yes! Yummy pineapple blended into the batter so you get a taste of its sweetness in every bite.
Only six healthy ingredients too! Pineapple, cashews, coconut, dates, almond flour and vanilla extract. No added sugar, no ingredients you can't pronounce. Just real wholesome goodness! The best part is how simple they are to make. Throw them up in a food processor and roll!
So simple to make these healthy no-bake snacks are gluten free, dairy free and are perfect for a quick snack or dessert or to pack in a lunchbox or share with friends!
Energy bites are one of my FAVORITE things to meal prep for a healthy snack. They are cheaper than buying store bars and better for you because you can control the ingredients.
They are quick to make with only a short ingredient list, but they look and taste so decadent. Oh my! What a dreamy treat.
One little energy ball makes me happy in an instant. They are soft and chewy and you are going to love this superfood candy. So, if you have been looking for a nutritious homemade protein/energy bite then this is the ultimate one!
Let me ask, have you jumped on the energy bite/protein ball craze yet? The ones made with dates/nuts/seeds/oats/other healthy goodness? I have been making these healthy treats for years and never get tired of them.
There are so many reasons to love them! Whoever is responsible for the idea that we should mash a bunch of healthy ingredients into one little ball as a snack is an absolute genius in my book.
Moreish snack balls, bliss balls, truffles, energy bites, call them what you like. They are a perfect little nutrient-dense bite for a satisfying and are seriously SO GOOD. They make the perfect gift for any of your health-conscious or chocolate-loving friends too.

Ingredients

  • 1 cup cashews, soaked 3+hours and drained
  • 1 cup crushed pineapple (drained)
  • 1 cup desiccated coconut (plus extra ½ cup for coating)
  • 1/2 cup dates soaked 30 minutes and drained
  • 1/2 cup almond flour (or finely ground oats)
  • 1 teaspoon vanilla extract

Instructions

  • Add the cashews into a food processor and process until broken down and crumbly. Add the pineapple, 1 cup coconut, dates, almond flour and vanilla and process until mixture is smooth and well combined,
    Be careful not to over process as its nice to have texture variance and different sized “bits” in your energy bites.
    Remove dough and if the batter seems too wet or has too much liquid, add a little more almond flour to hold it together.You can also refrigerate the batter 20 minutes before rolling into balls to firm it up to make it easier.
    Place the 1/2 cup shredded coconut on a large plate.
    Roll the dough into 12 -14 bites then roll in the coconut to coat. Keep your fingers damp as you roll the dough so it doesn't stick to your hands!
    Store the bites in the refrigerator 2hours to set before enjoying! Store bites in the refrigerator up to 2 weeks or in the freezer up to 3 months.
