Coconut Caramel Fudge

Fudge was a treat my family made often when I was young. More times than not, it was the dessert made for birthdays and celebrations. The kind we made though was not healthy at all - loaded with huge amounts of white sugar and other undesirable ingredients.
This fudge, on the other hand, is so much healthier. Packed with healthy fats from the coconut oil and nut butter, naturally sweetened with honey and… it’s just as delicious! It requires few ingredients, minutes of melting/stirring time and no candy thermometer is required!
This caramel fudge recipe is the perfect example of an easy dessert or snack that's actually good for you. Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy, chocolatey goodness.
Really though, this salted caramel fudge is creamy, rich, and decadent yet healthy and insanely delicious! It’s my favorite kind of healthy…the kind that doesn’t taste healthy at all!
Between the decadent chocolate bottom layer of fudge and the gooey salted caramel topping, this is as delicious as it gets! Perfect for indulging your sweet tooth without the guilt!

This fudge is super soft, yet holds its shape long enough for you to pop them in your mouth…  where they then melt in your mouth. Yum!

Fully customizable too – you can add your own extras like nuts, dried fruit, seeds or other flavours to the simple base recipe.
One little square makes me happy in an instant. It’s soft and it melts in your mouth so beautifully. I top the fudge with a sprinkle of sea salt for a perfect sweet, salty combination.

Ingredients

Bottom Chocolate Layer

  • 1/2 cup coconut oil,melted
  • 1/2 cup creamy naturalpeanut butter
  • 1/2 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt

Caramel Layer

  • 1/2 cup Caramel Sauce – store bought or homemade recipe below in notes

Topping

  • course sea salt

Instructions

  • In medium bowl add coconut oil, peanut butter, honey, vanilla, cocoa and salt and stir until mixed well.
    Scoop mixture into a small container lined with parchment paper. I used a 6×9 inch glass casserole dish. Spread into an even layer and refrigerate or freeze for at least an hour before adding the caramel topping.
    While the fudge sets, prepare the caramel sauce by following the recipe below in notes.
    Pour 1/2 cup of the caramel sauce onto the fudge and spread to cover evenly.
    Sprinkle with course sea salt, cut into 12 (or more/less) squares.
