Coconut Butter Stuffed Dates

Have you tried coconut butter? It’s kind of like nut butter, and you can buy it at natural grocery stores or make your own (homemade recipe below in notes).
It’s made from one thing: dried coconut flesh that’s pureed until silky smooth, so you’re getting the meat and healthy fats (whereas coconut oil is just the fat).
Coconut is an extremely power healing ingredient, boosting the immune system and acting as an antibiotic, antiviral, antibacterial, antifungal and antimicrobial.
Sometimes the craving for something sweet hits so quickly, and so aggressively that you find yourself scrambling in the kitchen, looking for something that was already baked, or a candy bar, or a bag of chocolate chips that you spontaneously decide are not necessary for the chocolate chip cookies you were planning to make.
If you don’t have access to these options, you dip into the sugary cereal you know you shouldn’t be feeding your kids, or you make some cinnamon toast, with more brown sugar than cinnamon, or toast.
Or, you pause, remember your health and waistline and choose a piece of nature’s candy instead.   You know, a bowl of grapes or a ripe peach.  Bah! Who are we kidding?? When that urge for sweetness hits, fruit just isn’t going to cut it unless its been morphed into a pie, or unless that fruit is a date.
Dates are truly nature’s sweet, sweet candy. Nature’s best hidden gems.
They are so sweet that they are being used by all sorts of creative people to make desserts which are healthy and delicious.
Dates are a nutritional powerhouse - these small but mighty fruits pack a big nutritional punch being a source of bone-friendly minerals including phosphorus, potassium, calcium and magnesium along with vitamin K making these little two-bite delights a guilt free treat.
Medjool dates in particular are plump, soft, sweet and surprisingly filling.
Whether you’re looking for an healthy treat or something easy to satisfy your sweet tooth, Coconut Butter Stuffed Dates are THE answer.
They are truly “real food” decadence. Imagine a chewy coconut caramel that melts in your mouth, yet its made from just two ingredients that are literally the salt of the earth.
When you pair dates with coconut butter you have a match made in heaven. Coconut contains a unique type of medium chain saturated fat called lauric acid that research shows raises HDL or "good" cholesterol levels, which lowers overall heart disease risk.
As a plant food, coconuts also contain disease-fighting phytochemicals or antioxidants. Research suggests that coconut products helps boost metabolism which is helpful if excess body fat needs to be lost.
Just one scoop of coconut oil delivers a wide-range of healing properties. Produced in its most natural state, coconut oil will benefit you, your children and your pets. I put some into my dogs dinner regularly.
Whether you have chronic fatigue, weight problems, digestive or skin issues, or just want to give your body a good cleanse and boost your energy, coconut in any of its forms is so good for you.
People trying to reduce their sugar intake often complain about the lack of sweets in their quest to get healthier. That’s because a low-carb way of eating is very focused on eliminating harmful sugar from your diet. But there are healthy options for that lingering sweet tooth in your life.
Hence this healthy candy is both low-carb and packed with healthy fats and antioxidants. Eating more healthy fats is a great way to help satisfying your sweet cravings without the sugar.
Not only is this candy insanely delicious and easy to prepare, it also comes with some surprising health benefits. From vitamins and minerals to plenty of healthy fats that support hormone health and neurotransmitter production, these little delights are the perfect addition to any healthy eating plan.
These candies are- super rich, uber decadent - but secretly healthy and guilt-free!  Yup, that means no butter, no white sugar and no sweetened condensed milk…  just pure, fudgy, coconutty goodness.

Ingredients

  • 10 pitted fresh dates
  • 1 cup coconut butter - store bought or homemade recipe below in notes

Instructions

  • Warm up the coconut butter so it’s more spreadable. You can gently warm it in a small dish in the microwave if it’s not soft enough to scoop out with a spoon.
Slice open each date so that it opens out but isn’t sliced in half and scoop it into the cavity, or just spoon it out and press into the dates.
Stuff each date with as much coconut butter as you can fit in while still being able to close it up.
Let it sit in the fridge for a bit to set the coconut butter, if you can wait that long. 🙂
