Coconut Butter Stuffed Dates

Ingredients
- 10 pitted fresh dates
- 1 cup coconut butter - store bought or homemade recipe below in notes
Instructions
- Warm up the coconut butter so it’s more spreadable. You can gently warm it in a small dish in the microwave if it’s not soft enough to scoop out with a spoon.Slice open each date so that it opens out but isn’t sliced in half and scoop it into the cavity, or just spoon it out and press into the dates.Stuff each date with as much coconut butter as you can fit in while still being able to close it up.Let it sit in the fridge for a bit to set the coconut butter, if you can wait that long. 🙂
