Coconut butter fudge has been my go-to treat for a few years now. When I get a craving, it’s usually for sweets and fats. Coconut butter fudge always delivers the goods! It is such a satisfying snack that I never need more than one or two small pieces to feel content.

Have you ever taken a bite of a snack or dessert and from the very first taste were like, “Omg. That is SO GOOD.” “So good I probably shouldn’t be eating it.” Indulgent taste. Melt in your mouth goodness. This fudge feels like it’s totally sinful. Silky. Creamy. Smoooooth. But guess what! It’s HEALTHY. Fresh and DELISH – without needing any sugar, dairy, artificial sweeteners or JUNK. This fudge is my newest obsession. And once you try it, you will see why!

I absolutely love experimenting with creative ways to make fudge *without* using ANY dairy or ANY sugar. But this recipe has this ONE special ingredient that is so insanely unique and delicious. I wanna drizzle it on everything.

What is it?? COCONUT BUTTER. This is a GAME CHANGER.

What is Coconut Butter?

If you are new to coconut butter, it’s probably confusing. No, it’s not like “real” butter. It’s more like almond butter, but made with blended coconut instead of blended almonds. It’s naturally mildly sweet (but there’s no sugar added.)  In short, it’s MAGIC. 😉

This is a big one – it *doesn’t* taste like coconut. Seriously! It has almost a shortbread flavor. And not like any nut butter you have ever had before. Because it naturally contains coconut *oil*, it hardens when chilled.

Coconut Butter has a very unique property – it is solid and almost rock hard at room temperature and below, and liquid when heated/melted. It has a buttery silky texture and mouthfeel and mild flavor. These properties make it ideal for candies and other dessert treats. On the other hand, there is no real substitute for coconut butter. There’s nothing else really like it. You can buy coconut butter or you can easily make your own. The simple recipe is below in notes.

Good thing that my favourite thing to do is take an old fashioned ‘not-so-healthy’ recipe and ‘healthify’ it – turning it into a healthier alternative.

These sweet fudgy bites are PERFECT for your drive-by fridge perusal. You know what I’m talking about? When you need a quick boost of energy and you head to the refrigerator for something to pop in your mouth. No time to cook anything, just-need-a-little-something-to-get-you-through type of thing.

Coconut Butter Chocolate Protein Fudge

Ingredients

Bottom Chocolate Layer

  • 1 1/2 cups dark chocolate chips
  • 1/2 cup coconut butter – store bought or recipe below in notes
  • 1/4 cup plus 2 tablespoons thick creamy coconut milk* see note below
  • 1 teaspoon vanilla extract

Coconut Layer

  • 1 cup coconut butter – store bought or recipe below in notes
  • 1/2 cup desiccated coconut
  • 1/4 cup protein or collagen peptides powder, plain or vanilla
  • 1/4 cup honey or maple syrup
  • 1/4 cup thick creamy coconut milk* see note below
  • 1 teaspoon vanilla extract

Chocolate Drizzle Topping 

  • 1/2 cup chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • If you are going to make your own homemade coconut butter, make this first so its ready when you wish to make the fudge.
  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.

Bottom Chocolate Layer

  • Make the chocolate layer first: In a small saucepan over very low heat, melt the chocolate chips and coconut butter while stirring continuously. Stir in coconut milk and remove from heat, then stir in the vanilla.
    Spread the chocolate mixture in the parchment lined pan using a spatula to scrape out every drop. Chill in the freezer while you make the coconut layer.

Coconut Layer

  • In a small saucepan over very low heat, melt the coconut butter and honey while stirring continuously. Stir in the coconut, protein powder, coconut milk and remove from heat, then stir in the vanilla.
    Sprinkle the coconut layer evenly over the thickened chocolate layer (shouldn't be completely set or the two layers will separate as they cool),

Chocolate Drizzle Topping

  • Place chocolate chips and coconut oil in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Once melted, drizzle the melted chocolate/coconut oil over the top. Put in the freezer for 10 minutes to set and then cut into 16 squares to serve!
    Store leftovers in either the freezer or refrigerator. The freezer will give it more of a candy bar consistency while the fridge will make it more like fudge.
    Recipe Notes:
    *I refrigerated my can of coconut milk so the water and cream separate, then discarded half the water and blended the rest together for a thick, creamy coconut milk.
