But these small but mighty bites are truly a minimum fuss dessert. They hit at only 8 ingredients.  The flavour and richness are wild. So, SO good. I have the bites all waiting in a container in the freezer, and I just set one (or two or three) out to thaw a bit while cleaning up after dinner. Perfect sweet relief at the end of a busy day.

Ingredients

  • 1 cup oat flour (rolled oats blended into flour)
  • 1/2 cup thick Greek-style yogurt
  • 1/3 cup peanut (or any other nut or seed) butter
  • 1/3 cup vanilla or chocolate protein powder
  • 1/4 cup honey or maple syrup
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract

Chocolate Filling

  • 1/4 cup chocolate chips

Optional Toppings

  • Rolled oats
  • Mini chocolate chips
  • Drizzle of melted chocolate
  • Crushed, chopped peanuts

Instructions

  • Place all ingredients in a medium sized bowl and mix together until a thick dough forms. If mixture feels too soft, add 1–2 additional tablespoons oat flour or protein powder.

Chocolate Filling

  • Place chocolate chips in small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips.
Let cool slightly so it thickens into a spoonable, gooey paste.
Take a tablespoon of dough, flatten it slightly in your palm, and add a small dollop of melted chocolate in the center.
Wrap dough around the filling and roll into a ball.
    Repeat for all bites.
    Optional: Roll in toppings
Roll each ball in oats or sprinkle chocolate chips on top.
Refrigerate for 20–30 minutes or freeze for 10 minutes to help them set.
And then… enjoy that melty, fudgy magic. ✨
