Servings 12
Ingredients
- 3 cups strawberries, chopped
- 1 1/2 cups Greek yogurt
Chocolate Coating
- 1 1/2 cups chocolate chips
- 1 tablespoon coconut oil
- Coarse salt for topping
Instructions
- Line a baking tray with parchment paper or use a silicon baking mat.Start by chopping all your strawberries into small pieces. I used about a regular size container of strawberries to get three cups.Place the strawberries with the yogurt in a bowl. Use Greek yogurt for a healthy option or your favourite flavoured yogurt if you want them sweeter.Stir gently to combine using a spatula. Using a tablespoon make 12 (or more smaller clusters) spoonful’s or clusters of the strawberry yogurt mixture onto the lined tray, ensuring it will fit in the freezer first.Spoon the strawberries and yogurt into circular clusters onto the lined baking sheet. Leave a little gap in between each spoonful.Transfer to the freezer and leave for one hour or until frozen solid.
Chocolate Coating
- Place chocolate chips and coconut oil in small dish and microwave at 50% power with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Dip each strawberry yogurt cluster in the chocolate using one or two forks to hold them. If the chocolate starts to cool it won’t stick as well, if this happens pop back in the microwave with a little more coconut oil and chocolate.Top each cluster with a sprinkle of salt if desired before they cool. When done, return to the freezer immediately. If you want to eat them right away, just freeze for 15 minutes, remove and serve. To have another time you will need to take them out of the freezer about 30 minutes before you are ready to eat so they soften a little.Store in a resealable food bag or air-tight container in the freezer for up to 3 months.
