Ever since I was a child I had a soft spot for caramel. I was that picky kid who had to check the instruction sheet that came with a box of chocolates first, to see which ones had caramel hidden inside! This is why I’m surprised it took me this long to create these chewy and irresistible salted chocolate caramels that taste even better than the ones I remember from childhood.
But WOW! Just wow! These beautiful, delicious healthy, snack balls will wow everyone. So super simple to make, one step in the blender, coat in melted chocolate and you are done!
If you love heathy candy like I do, then you will understand why I have to make it in the form of small bites. After so many recipes, baked or no baked, bars and cupcakes, it’s time for snack bites, bliss balls, energy balls, call them what you like. To me they are little spheres of snacking. Little orbs of awesomeness.
These yummy salted caramel bites are my go-to snack whenever I am looking for an instant boost of energy or even when I just want to treat myself and my loved ones with a sweet delicious dessert made healthy.
This recipe should be at the top of your dessert list. This foolproof confection recipe boasts a luscious filling of dates and nut butter perfectly balanced with and coconut cream.
There’s just something about this combination of ingredients that unconsciously pulls my lips into a smile whenever I treat myself to a creamy sour-sweet bite. Tangy and delicious, these delicious bites have a delightful combination of rich and creamy that will wake up all your sleeping taste buds.
They are easy to make and ready in no time and are packed with protein and fiber. They really do make the perfect bite-sized dessert and are one of those ‘bet you can’t eat just one’ kinda treats! That tangy, creamy, caramel filling can be so addicting…
But these small but mighty bites are truly a minimum fuss dessert. They hit at only 8 ingredients! The flavour and richness are wild. So, SO good. I have the bites all waiting in a container in the freezer, and I just set one (or two or three) out to thaw a bit while cleaning up after dinner. Perfect sweet relief at the end of a busy day.
I love a good yummy something and it’s become a tradition that I make something for the weekend, almost every weekend. It’s just a nice way to reward yourself I think, and keep the sugar-intake at a minimum.
Because these caramel bites are crazy amazing you can feel good about eating one or two of them, even for breakfast and not feel one piece of guilt. They are perfectly portioned and great for sharing and make an excellent treat to gift to friends, or serve as desserts.
They taste better because they are made with love, using pure wholesome ingredients, without any additives, rancid oils, or refined sugar. They consist of only 8 ingredients, and are no-bake, dairy-free, gluten-free, and vegan!
The best thing about homemade desserts is that you are in charge of the quality of ingredients and the amount of natural sweeteners that go in. In this case, since the caramel center mainly consists of dates, so no extra sweetener is needed. However, feel free to adjust that as you wish.
Get ready to treat yourself to these homemade Salted Chocolate Caramels! They are a fun and easy way to satisfy your sweet tooth with a healthier twist.
Chocolate Salted Caramel Bites
Ingredients
Caramel Center
- 1 cup dates, soaked 30 minutes and drained
- 1/2 cup cashew (or other nut/seed) butter
- 1/4 cup full-fat canned coconut milk
- 2 tablespoons coconut flour
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
- pinch flaky sea salt
Instructions
Caramel Center
- Line a 7 x 5-inch loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.Add all ingredients to a food processor and blend until smooth. Press the mixture into the lined loaf pan, smoothing it out with the back of a spoon or spatula. Cover and freeze for about 2-3 hours until firm
Chocolate Coating
- Start making the chocolate coating 15 minutes before the caramel bites are set. Place chocolate chips and coconut oil in small dish and microwave with 30 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.Remove the bites and after checking they are firm and set, remove from pan using the parchment paper handles and cut into 10-12 bars.Skewer each bar or use 2 forks to hold each bar and dip into the melted chocolate, then place on a rack to dry. Or hold each bite with a fork over the bowl of melted chocolate and spoon it over, letting the excess drip back into the bowl.Quickly sprinkle with sea salt before the chocolate sets within seconds!Enjoy them right away or store in the fridge for up to 1 week for best results.
