Chocolate Raspberry Chia Cups

Easy 6-ingredient chocolate cups with raspberry chia jam tucked inside a snappy dark chocolate shell. They taste like legit rich, soft cantered traditional chocolates but are still sweet, even addictive and they come in an adorable little package.
If you love dark chocolate, or you are looking for a way to “healthify” your chocolate habit, then you have got to give this healthy chocolate recipe a try!
Can chocolate really be good for you?
It’s a great question and I’d like to just say yes, but of course, it’s not quite that simple! Based on everything I’ve learned, I believe that dark chocolate can be good for you, in small amounts.
Enjoying chocolate doesn't have to be a guilt-ridden affair. With some knowledge and mindfulness, you can savor your favorite treats while maintaining your health goals.
Chocolate isn’t just a sweet treat; it symbolizes joy,celebration, and nostalgia. Whether it's the colorful array of candies that brighten up Easter baskets, Halloween candy, or the festive candy canes adorning our Christmas trees, candy plays an integral role in our lives year-round.
I want to introduce an important principle: balance and moderation. While indulging without restraint is tempting, enjoying candy in moderation as part of a balanced diet is the best way to support your health and well-being.
So I believe candy can be part of a balanced diet and a little bit of good quality dark chocolate on a regular basis is good for you. Even milk chocolate can be saved for an every now and then treat.
Chocolate and raspberries are my JAM! Seriously though these Raspberry Chia Jam filled chocolate cups are SO good! They taste better than store bought chocolates in my opinion. You can’t go wrong with these cute little treats.
A quick and easy no bake dessert idea. I made this simple dessert to celebrate Valentine’s Day, but they are perfect any time of the year. Try switching out the raspberries for other fruits like blueberries, strawberries, or mixed berries!
You can also try making these into mini form! They are super adorable, easier to eat, and make double the amount of cups. Perfect to take to a pot luck or family gathering. They will be gone in a heartbeat!
To make these, I suggest using Silicone Baking Cups or a Mini Silicone Tray. The silicone allows them to slide right out once set.
The final but optional touch is a sprinkling of sea salt. It *pops* the richness of the chocolate and the sweetness of the jam. I hope you love these long-forgotten treats as much as I do.

Ingredients

 Raspberry Chia Jam

  • 3 cups raspberries, frozen
  • 2 tablespoons honey or maple syrup
  • 3 tablespoons chia seeds
  • 1 tablespoon lemon juice

Chocolate Cups

  • 1 3/4 cups chocolate chips, dark or semi-sweet
  • 1 1/2 tablespoons coconut oil
  • Flaky sea salt, for topping (optional)

Instructions

Raspberry Chia Jam

  • Prepare the Chia Jam
    In a saucepan, heat the frozen raspberries, lemon and honey until the raspberries start to break down.  Mash them a little with a fork and gently simmer for about 5 minutes. Take off the heat and stir in chia seeds and stir every few minutes or until the chia seeds have absorbed the liquid. The jam will thicken as it cools.
    Let the jam chill completely before using.

Chocolate Cups

  • Line a muffin tin with 12 paper liners or use a silicone muffin tin. Set aside.
    Place 1 cup of chocolate chips and 1 tablespoon coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth. It should be melted after around 1 minute and 30 seconds, but it can vary with each microwave.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Pour the chocolate evenly at the bottom of each cup. Using a spoon, push some of the melted chocolate to the sides of the paper liners, about halfway to the top of each cup.
    This will make the sides of the cups and will ensure that the jam doesn't pour to the sides. Place in the fridge on a flat surface and let chill for 5 minutes or until the chocolate firms up.
    Once the chocolate is ready, fill each cup with about 2 tablespoons of chia jam. Don't overfill them. It should just reach the top of the chocolate on the sides of the cup.
    Melt the remaining 3/4 cup of chocolate chips using the same method, with the remaining 1/2 tablespoon of coconut oil. Top every cup with more melted chocolate. Sprinkle a small amount of flaky sea salt on each cup if desired.
    Place in the fridge and let chill for 10 minutes or until firm.
    Store the cups in an airtight container in the fridge for up to 1 week.
