I love the creamy, chocolatey, nutty fat-fuelled goodness of this fudge and make it regularly. I’ve been sneaking cottage cheese into recipes for years to help hit protein goals – and trust me, even my family can’t taste it! This fudge is a freezer staple at our house when we want something chocolatey without the sugar crash.

Chocolate lovers, we have something to celebrate with this recipe! Today, we are jumping into the world of healthier snacks with a QUICK and easy protein fudge recipe. This sweet treat is not only easy to make but it’s actually good for your mind, body and soul.

Sometimes I look at my recipe blog/site and laugh that I dedicate so much of my time to a never ending stream of chocolate based snacks. I have zero issue with this achievement, nor do I plan to change it. Why would I? Chocolate is just the best and it deserves to nourish us in snack form.

Plus, chocolate isn’t just good for the soul. It can be good for us nutritionally speaking, too. Don’t get me wrong – fudge is fudge, and I definitely place it in the snack category…but choose yourself a good quality chocolate and pair it with whole food ingredients and some protein and you have yourself ‘healthier’ more nourishing fudge.

I have ‘healthified’ this recipe so you are going to be using REAL good for you ingredients that add to your health not TAKE AWAY from it. It is super rich, uber-decadent – but secretly healthy and guilt-free!  Yup, that means no butter, no cream, no refined sugar and no heavily sweetened condensed milk…  just pure, fudgy, chocolatey goodness

To make this fudge recipe even healthier, I have added protein powder to make  it more balanced than the traditional high carb, low protein recipe. Old fashioned baked recipes always had tons of sugar, carbs and fats. The new modern way is to add protein making the recipe more balanced and healthy.

Chocolate Peanut Butter Cottage Cheese Fudge

Ingredients

  • 2 1/4 cups cottage cheese
  • 1/3 cup cocoa powder
  • 1/4 cup protein powder or collagen peptides powder
  • 1 1/2 cups chocolate chips
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract

Optional Peanut Butter Swirl Topping 

  • 1/4 cup peanut butter 
  • 2 tablespoons coconut oil
  • 1/2 cup peanuts, roasted, chopped
  • Flaky salt

Instructions

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting.
    In a food processor or blender, process the cottage cheese until smooth and creamy. Scrape down the sides to ensure there are no lumps.
    To the blended cottage cheese add cocoa powder, protein powder, coconut oil and vanilla extract and blend until smooth.
    Melt the chocolate next.
    Place chocolate chips and coconut oil in medium dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Alternatively, melt the butter and chocolate chips in a small saucepan over low heat on the stove. 
    Transfer the cottage cheese mixture to a bowl, add melted chocolate and mix until combined and smooth.
    Pour the fudge mixture into the lined pan, smoothing out the top with a spatula or back of a spoon.

Optional Peanut Butter Swirl Topping 

  • If you are using the optional peanut butter topping, melt the peanut butter and coconut oil together in a small dish and microwave with 15 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the peanut butter and the coconut oil together.
    Pour this mixture over the cold fudge and swirl it into the chocolate fudge with a butter knife. Garnish with chopped peanuts and flaky salt if desired.
    Refrigerate for at least 3 hours or until firm. For a firmer consistency, freeze for about 30–60 minutes.
    Once set, cut the fudge into 20 small cubes (more or less) and store it in an airtight container in the fridge for up to 7 days or freeze for up to 3 months.
    If frozen, let defrost slightly before eating (or microwave a piece for 10 seconds if you're impatient).  🙂
