3 tablespoons flour (spelt, white, oat, coconut or almond)
1 tablespoon cocoa powder
1-2 tablespoons sweetener of choice
¼ teaspoon baking powder
1 tablespoon coconut oil or butter, melted
3 tablespoons milk of choice
½ teaspoon vanilla extract
Combine dry ingredients and mix well. Add liquid, stir, then transfer to a little dish or ramekin. Either microwave 40-60 seconds or cook in a 180°C oven for about 14 minutes. Frost with Chocolate cream cheese frosting.
Chocolate Cream Cheese Frosting
1 tablespoon cocoa powder
2 oz melted chocolate (optional)
4 oz cream cheese
1 tablespoon butter
1-2 tablespoons sweetener of choice
½ teaspoon vanilla extract
1-2 tablespoons milk of choice
Let cream cheese and butter come to room temperature. Beat all ingredients with an electric mixer or stand mixer (or by hand, which won’t be as whipped and fluffy but still works). If too thick, very slowly add more milk of choice.
Top cake with the frosting.
