Ingredients

  • 1/2 cup coconut butter, store bought or homemade recipe link below in notes
  • 1/2 cup protein powder (chocolate or vanilla)
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 2-3 tablespoons milk of choice (as needed)
  • 1/4 cup dark chocolate chips (optional)
  • 1/2 teaspoon vanilla extract
  • Extra coconut butter for drizzling

Instructions

  • If making your own coconut butter, make this first so its ready when you make the cookies.
    Gently warm the jar of coconut butter in a bowl of hot water (or a 10 second burst in the microwave) until smooth and pourable. Do not overheat.
    In a bowl, stir together melted coconut butter, honey and vanilla until smooth.
    Add protein powder and cocoa powder. Stir until a thick dough forms. Add milk 1 tablespoon at a time until the dough is soft but not sticky.
    If using, stir in dark chocolate chips.
    Scoop dough, roll into 12-14 balls and flatten each one into a cookie shape. Drizzle with extra melted coconut butter if desired.
    Place on a parchment-lined tray. Refrigerate for 30–45 minutes or freeze for 15–20 minutes until firm. Once set, cookies are ready to eat.
    Store in the fridge for up to 1 week or freezer for up to 3 months.
    If frozen, let thaw for a few minutes as best enjoyed slightly chilled for the perfect texture.

    Extra Fudgy: Use chocolate protein powder and add 1 extra tablespoon coconut butter
    Almond Joy Style: Add shredded coconut and chopped almonds
