I have been making these frozen yogurt protein-rich treats on repeat lately so I had to share! I love the combo of chocolate and almond butter and the nutrition facts are on point with 12 grams of protein and 8 grams of fiber per bite!

Chocolate-Coated Frozen Yogurt Protein Bites
Equipment
- 8 popsicles sticks
Ingredients
- 1 1/2 cups thick Greek-style yogurt, plain or vanilla
- 1/2 cup almond or cashew butter
- 1/4 cup protein or collagen peptides powder
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
Chocolate Coating
- 1 cup chocolate chips
- 1 tablespoon coconut oil
Toppings Optional
- 1/2 cup roasted, salted, chopped peanuts
- Fresh or freeze-dried fruit
- Chocolate chips or shavings
- Shredded coconut
Instructions
- In a mixing bowl, combine the yogurt, peanut butter, protein powder, honey and vanilla extract. Stir until smooth and well combined.Taste test and add more honey or vanilla if you think it needs it.Line an 7×5-inch loaf pan or a similar-sized pan with parchment paper, leaving some overhang for easy removal. Or use am 8 popsicle mold and insert popsicle sticks for easy eating.Pour the yogurt mixture into the prepared pan and spread it evenly with a spatula or back of a spoon. Next melt the chocolate coating.
Chocolate Coating
- Place chocolate chips and coconut oil in a tall glass (for easier dunking) and microwave with 20 second bursts stirring between each one until melted and smooth.Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.If making them into popsicles, melt the chocolate in a tall glass or dish and simply hold the popsicle stick and dip the frozen popsicles in half way or all the way.If desired, sprinkle mini chocolate chips, chopped nuts, or fresh fruit on top of the chocolate while it is still wet, pressing them in gently.Store in the freezer for up to 3 months. If frozen, let them sit at room temperature for a few minutes before serving.
