Cashew Coconut Nice Cream

I just found my new favorite nice cream recipe! This nice cream is creamy, lightly sweet, and satisfies that ice cream craving without too much indulgence.
Unlike regular ice cream, nice cream is made by creaming frozen bananas until they reach a smooth ice cream-like consistency. This recipe makes it even better by adding in cashew butter for extra-creaminess and a sweet/salty combo that tastes too good to be healthy!
I eat a lot of nice cream. I eat so much nice cream that I have a never-ending stock of frozen banana slices in my freezer just for when that ice cream craving hits.
Banana-based ice cream may be the original nice cream, but the term has come to represent any fruit-based treat free from loads of sugar and artificial flavors,
Its rich, creamy, and luscious enough for a special occasion yet light and easy enough for an any time indulgence.
It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently.
It sounds too good to be true doesn’t it? Ice-cream just out of bananas – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.
It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.
You can satisfy an ice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!
Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy!

It’s healthy ice cream! There’s no cholesterol or refined sugar added, with plenty of healthy fats to help keep you feeling satisfied.
No ice cream maker required. I’ve tested this recipe both ways, and you can definitely make it without the ice cream maker if you don’t have one.
Simple ingredients. All you need is 4-5 simple ingredients, which you may already have on hand in your pantry.

Ingredients

  • 2 bananas, sliced, frozen
  • 1 13.5 oz can full-fat coconut milk
  • 1/2 cup cashew butter
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Optional Add-ins

  • 1/2 cup cashews, roasted, chopped

Instructions

  • Add all ingredients except the Optional Add-into a food processor or blender: bananas, coconut milk, cashew butter, honey and vanilla.
    Blend until smooth. Periodically scrape down the sides of the blender/processor.
    Pour into a freezer-friendly container with a lid. Cover and place into the freezer.
    Freeze for 1 hour. Then, if using, fold in chopped cashews - the ice cream mixture will be thickened and creamy - this will prevent the cashews from sinking to the bottom.
    Freeze for an additional 2-5 hours, until firm. If enjoying the next day or later, allow to thaw for about 30-60 minutes at room temperature, or until soft enough to scoop.
