Cashew Blue Spirulina Protein Snack

Cashews make the most amazing snacks. I love snacks that come in an all-in-one compact form, as it means I can take them with me anywhere, which works so well with my busy lifestyle. Healthy, prep-able and convenient are my top priorities when it comes to snacking!
Whoever is responsible for the idea that we should mash a few healthy ingredients into a one or two bites is an absolute genius in my book.

You could call this recipe natures candy and these babies are one of the easiest things to make, the perfect little nutrient-dense bite for a satisfying and beneficial snack! After all, who doesn’t love a good protein/energy/bite ball or bar?
They are among the most tasty, filling, and convenient healthy snack ideas you can enjoy. If you are looking to make homemade snacks, though, then you have probably got an inkling that DIY’ing it has certain advantages.
The main draw with going the homemade route is the infinite customizability. When you make your own healthy treats, you never have to compromise on getting exactly what you are looking for. You can also save money and they can taste way better than anything you can buy at the store.
Now lets look more at the blue colour.
Blue Spirulina powder has been added to give a pretty vibrant blue effect.
Blue Spirulina, a well-known antioxidant superfood, is the magic ingredient that makes any food look Instagramable (#trendy). This intense deep blue pigment is known as phycocyanin and is extracted from spirulina (blue-green algae).
It is rich in protein, vitamins, minerals, iron, carotenoids and antioxidants and helps protect cells from damage. It is freeze dried to preserve its natural colour and nutrients.
You can get creative and add this beautiful nature product to literally anything for a heavenly nutritional boost and some epic blue instaworthy pictures!
You can add it to water, juices, smoothies, breakfast food, baked food, sweets, yoghurts, cereals or any other foods. For light blue shades, use just a pinch and for a more brilliant blue, use up to a one or more teaspoons.
Its known to have high nutritional value and boosts the immune system, increases metabolism and improves digestion! Contains an abundance of B vitamins which can enhance energy levels.

Ingredients

  • 2 cups cashews, soaked 3+ hours and drained
  • 4-6 tablespoons milk of choice
  • 2 teaspoons blue spirulina
  • 1 lemon lemon, juice and zest
  • 1-2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  • Place all ingredients into a food processor with at least 2 tablespoons of milk. Whether you need more milk to make the mixture creamy depends on how soft the cashews are.
    Depending on the power of your blender it might take a few minutes to arrive at a smooth mixture. Stop blending to scrape the sides if necessary and continue to blend until smooth.
    Add a little more milk, a tablespoon at a time until the mixture is smooth and creamy. Sometimes I add up to 1/4 cup of milk to smooth it out.
    Taste test to decide if it needs more honey, lemon or vanilla. Make it so it tastes good to you.
    Pour into molds (I buy silicon molds and use a squeeze bottle to pour it in) or use mini cupcakes papers or ice cube trays, freeze at least 2 hours (or longer depending on your freezer temperature) and then eat!
    Store in fridge for up to 1 week or in freezer for up to 3 months
