Caramel Cashew Ice Cream Bars
Gooey date caramel, cashews, coconut, all bundled in chocolate. Think: snicker’s ice cream bar but healthy!You will not find a tastier, more creamy treat than these Caramel Cashew ice cream bars. Made with real ingredients, super easy to make with just a handful of ingredients. You can also customise them with whatever your heart desires for the perfect healthy treat.
Ingredients
- 2 cup cashews, soaked 3+ hours and drained
- 1/3 cup honey or maple syrup
- 1/2 cup coconut milk, full-fat
- 1 teaspoon vanilla extract
Caramel Chocolate Layer
- 1/4 cup tahini (or nut/seed butter of choice)
- 3/4 cup dates, soaked 30 minutes and drained
- 1/4 cup coconut oil
- 1/2 teaspoon vanilla extract
- 1-2 tablespoons water as needed
- 1 cup cashews, roasted, chopped
- 4 oz chocolate, melted
Instructions
- Blend ice cream ingredients until very smooth.Pour into a loaf pan lined with parchment paper. Freeze.
- Blend caramel ingredients, adding water one tablespoon at a time as needed (some chunks are okay).Spread on top of the ice cream layer. Top with chopped cashews. press in lightly.
- Freeze overnight.Slice into bars, coat in melted chocolate, chill until set.
