Ingredients
- 1 1/2 cups coconut butter – store bought or recipe below in notes
- 1 cup frozen blueberries
- 1-2 lemons juice and zest depending on how lemon-ey you prefer
- 2 tablespoons honey or maple syrup
- Additional blueberries, shredded coconut or lemon zest for topping
Instructions
- If you wish to make your own coconut butter (recipe below in notes) make it first so its ready when you make your fudge.Let blueberries defrost for about half an hour before using. Line an 8 x 5” loaf pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the fudge out easier for cutting. Or use a silicon baking pan or dish.Place coconut butter in a small dish and microwave at 50% power in 20 second bursts until melted. Or place in a small sauce pan and gently heat until melted. Stir continuously until thoroughly melted, then remove immediately to avoid burning. Add honey and stir to combine.Into a food processor add blueberries, lemon juice and zest, melted coconut butter and honey and process until smooth and creamy.Scoop out the mixture into your lined pan and spread out evenly with a spatula or back of a spoon. Place in fridge or freezer for 30 minutes to firm up. Once firm, lift out of pan with parchment paper handles and slice into squares or triangles and top with extra blueberries, shredded coconut, or lemon zest.Store in fridge for up to a week or freezer for up to 3 months.
