Blueberry Lemon Chia Seed Parfait

Wouldn’t it be nice to have the time to prepare delicious and nutritious meals for ourselves three times a day? Let’s be real, though – that is a luxury most of us simply don’t have.
While it’s important to start out our days with a good meal to fuel our minds and bodies, I also think that’s the first thing many of us forget to do or decide we don’t have time for when we are pushed for time.
That’s where this Blueberry Chia Seed Parfait comes in. With a short prep time of 10 minutes and only 5 ingredients, this nourishing and satisfying breakfast comes together in no time.
I love how I can make a big batch at the beginning of the week; all I have to do in the morning is top it with some berries +whatever else lies in my pantry, and breakfast is served.
Chia seeds may be small, but they are incredibly rich in nutrients. A staple in the ancient Aztec and Maya diets, these seeds have been touted for their health benefits for centuries.
The nutrients in chia seeds promote heart health,support strong bones, and improve blood sugar management. They contain antioxidants, minerals, fiber, and omega-3 fatty acids. These nutrients play a role in supporting multiple body functions and systems.
If you have never made chia pudding before, the chia seeds gel up when setting in liquid and hold up to 10 times their weight in liquid!
Chia seeds are so good for you. Just two tablespoons contain four grams of protein and 11 grams of fiber, plus lots of omega-3s and calcium.
This recipe is the most delicious way to start your day. It’s super creamy and lightly sweet, with lots of blueberry jam flavor and a burst of lemon.
This quick and healthy recipe can be meal prepped and then refrigerated overnight for an easy breakfast, dessert, or snack on-the-go!
Creamy, rich, smooth and mousse like, it's your new favourite dessert. After trying it, I've made it countless times and I love having it on hand in the fridge when I have a craving for a ‘lil something’.

Ingredients

  • 1/4 cup chia seeds
  • 1 cup blueberries, fresh or frozen
  • 1 cup milk of choice
  • 1 lemon, juice and zest
  • 2 tablespoons honey or maple syrup

Optional Toppings

  • whipped coconut cream - recipe below in notes
  • chopped nuts
  • hemp or other seeds
  • shredded coconut
  • lemon zest

Instructions

  • Combine chia seeds, milk, lemon juice and zest and 1 tablespoon of honey in a small-sized bowl. Mix ingredients together with a spoon.
    Stir the mixture again 4-5 minutes later so the chia seeds do not clump together.
    While chia seeds are soaking, place blueberries and 1 tablespoon of honey in a microwave-safe bowl. Microwave on high for 45-60 seconds, or until berries begin to burst.
    Or place in a small saucepan over a low heat, mix thoroughly and allow to reduce down for around 1 minute, stirring regularly.
    Break up blueberries with a spoon until a thick, jam-like consistency is reached.
    Add equal amounts of the blueberry “jam” and the chia seed mixture to two 6-ounce jars or containers.
    Cover and store in the refrigerator for at least an hour before serving or up to overnight.
    Chia parfait will last in the refrigerator for up to 5days.
