Ahh… Mondays. Don’t they call for something sweet? Don’t they basically NEED something sweet? Ya know, to soften the blow of it being Monday. And if that sweet something is super healthy, ridiculously easy to make and comes together in just a few minutes?

EVEN BETTER.

You can even skip the baking involved in my Blueberry Coconut Honey Protein Bites recipe. ‘Cuz sometimes, ain’t nobody got time for baking (esp on Mondays).

So gather ‘round, all of my fellow No Bake Lovers’. I have something truly special for you. Yep, I said it. No Bake. Coconut Protein Bites. Woot woot! They are just the perfect way to kick of a sweet week, full of easy wins. (Here’s hoping!)

These coconut bites are made with just 8 ingredients, including: coconut butter, coconut oil, coconut, blueberries, honey, cashews and protein powder. The almond flour and protein powder is really the trick to keeping these babies together. I have kicked out all the junk involved in traditional coconut cookie type recipes and replaced them with only the good stuff. So…

no condensed milk
no egg whites
no powdered sugar
no dairy
no guilt
no baking!

That’s all, folks. And that’s what I call a Monday WIN. They are BURSTING with coconut flavor, the perfect balance between soft and dense and so incredible when chilled (think: ice cream bon bons, but minus the ice cream… okay, forget I said that!! Hehe).

This recipe is the perfect treat if you love coconut like I do. There is 3 different types of coconut products in this recipe. And that’s a good things as I’m obsessed with coconuts, they are my favorite ingredient in desserts and healthy snacks.

The world is going coconuts. Following the popularity of coconut water, a broad spectrum of foods derived from the humble coconut is available. It now comes in a variety of forms from water to milk, cream, butter, oil, flour and shredded allowing for a variety of creative ways to add coconut to a healthy diet.

Blueberry Coconut Honey Protein Bites

Here is the best no bake coconut protein bites recipe! These bad boys are egg free and dairy free, and fit many special diets - a one bowl recipe for perfectly sweet, no bake, blueberry protein-rich healthy snack bites bursting with coconut flavor.

Ingredients

  • 1 cup coconut butter store bought or homemade recipe below in notes
  • 1 cup blueberries, fresh or frozen
  • 1/2 cup coconut oil
  • 1/2 cup almond or oat flour
  • 1/2 cup desiccated coconut
  • 1/2 cup cashews, chopped (or other nut of choice)
  • 1/4 cup protein or collagen peptides powder
  • 1/4 cup honey or maple syrup

Instructions

  • Line a 12-hole muffin tin with silicone liners or paper muffin liners.
    Place a small saucepan over medium heat.
    Add blueberries and honey. Mix to help break down the blueberries. Add coconut butter and coconut oil and mix thoroughly.
    Remove from heat and add almond flour, coconut, cashews and protein powder and mix until combined.
    Scoop 1-2 tablespoons of the mixture out into each cup to a height that you prefer, then place in freezer for 20 minutes.
    Store up to 1 week in fridge or 3 months in freezer.
