These aren’t your average chocolate brownies – they have got that perfect balance of gooey decadence and melt-in-your-mouth frosting magic. Whether you are making them for a party, a family dessert, or just because, these brownies are guaranteed to impress.

If you have been following me, you already know how much I love keeping a stash of freezer-friendly protein-rich bites on hand – something essential to life and living!  So now, let me introduce you to one of my new favorite no-bake desserts: these rich, fudgy no-bake brownies.

Made with just a few whole-food ingredients, they are the perfect healthy snack to boost your energy or satisfy your sweet tooth – guilt-free. Luscious, gooey, super fudgy and insanely chocolatey – these no-bake brownies are delicious! Made with whole foods, these brownies are the ultimate guilt-free dessert!

I love brownies. Always have. Always will.  And these no-bake brownies are now my absolute FAVOURITE. And by looking at the pics, it’s easy to see why – they are chocolate heaven!

Now, here is why YOU’LL love these no-bake brownies

Fresh homemade flavor
1 bowl brownie batter + 1 bowl chocolate frosting
Yields a 8-inch square pan of brownies (about 16)
Intensely chocolatey
Dense and moist, yet still a bit chewy
Super chocolatey, very gooey but not sickly sweet.

They take less than 30 minutes to create.  Yes, they have to ‘set’ in the fridge for 1 hour BUT if you are impatient like me, simply pop the brownies into the freezer for 15 minutes whilst you make the frosting.

They are freezer friendly!  When stored in an air tight container – these no-bake brownies will last up to 3 months in the freezer!

The frosting is exceptional, so luscious but totally optional.  If you would prefer to keep these brownies a little more virtuous you can skip the frosting.  Simply top the no-bake brownies with shredded coconut or a quick dusting of cocoa powder instead!

So there you go – it’s so easy to be healthy yet still treat yourself at the same time. The proof? Well it’s in the pudding of course!

Fudgy, chewy no-bake brownies topped with a decadent, gooey chocolate ganache - these brownies have become a staple in my house. They are easy to make, absolutely delicious, and perfect as an energy bite before a workout or a healthy afternoon pick-me-up.

Ingredients

Brownie Base

  • 1 1/2 cups dates, soaked 30 minutes and drained
  • 1 cup cashews
  • 1 cup almond flour
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/4 cup cocoa powder
  • 1/4 cup protein or collagen peptides powder
  • 1 teaspoon vanilla extract

Tahini Frosting

  • 1 1/2 cups chocolate chips
  • 1 cup tahini (sesame seed butter)

Instructions

Brownie Base

  • Line a 8 x 8-inch baking pan or dish with parchment paper on the bottom and sides leaving some overhanging to act as a handle to get the bars out easier for cutting.
    Place all ingredients into a food processor and process until a sticky dough is formed.  It's okay if the mixture is crumbly, as long as it easily sticks together when you press it between your fingers.
    Scoop out into the lined pan and spread out evenly with a spatula or back of a spoon, Place the brownies in the freezer while you make the frosting.

Tahini Frosting

  • Place chocolate chips in small dish and microwave with 20 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips.
    Once the chocolate is melted stir in the tahini and mix well. Pour this over the brownie base. Chill for an hour before cutting into 16 pieces.
    If you don't want to serve the brownies right away, store them in an airtight container in the fridge until ready to serve. They will keep well in the fridge for at least 2 weeks. Or store in the freezer for up to 3 months.
    If frozen leave them out at room temperature for 10 minutes before serving for a softer texture.
