Banana Protein Pudding

Looking for a protein snack that is also a dessert?! This banana pudding is an absolutely must make, is totally fool proof and is as nutritious as it is delicious. 
This isn’t your ordinary pudding; it’s a powerhouse dessert with over 35 grams of protein, perfect for fitness enthusiasts or anyone looking to add a protein punch to their treat to keep you both full and nourished.
This healthy no bake dessert takes just minutes to prep and made using both cottage cheese and Greek yogurt!
It’s no surprise that cottage cheese is having a moment right now and I am here for it. It is super creamy, high in protein and by the time it takes a trip through the blender, I love the consistency it adds to different recipes. Such as this banana pudding!
Every time I eat a bite of my Banana Protein Pudding recipe, it’s like a nostalgic trip down memory lane – except with less sugar, less fat and more protein! That’s very “a-peeling” to my fitness nutrition goals!
A bowl full makes a great workout snack, healthy dessert – or even balanced breakfast (hey, there’s fruit in it!)
This is one of the BEST go-to desserts right before bed when you’re craving something sweet! We often see yogurt used as an evening snack to prevent choosing an unhealthy option, but this twist lets you flavor it and have a fun consistency (and tons of protein) too.
Night-time usage aside, it's a great way to stay on track and enjoy a yummy dessert or treat no matter the time of day. It will subdue even the fiercest sweet tooth!

Ingredients

  • 1 medium banana, sliced, frozen
  • 1/2 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 1 tablespoon Jell-O sugar-free, banana cream pudding mix
  • 1 scoop protein powder – vanilla
  • 1-2 teaspoons honey or maple syrup
  • 1 teaspoon vanilla extract

Toppings

  • Whipped coconut cream – store bought or recipe below in notes
  • Chopped nuts or fruit
  • Desiccated coconut

Instructions

  • Place all ingredients into a food processor or high speed blender and process until thick and creamy.
    Top it Off: Just before serving, add a generous dollop of whipped coconut cream topping (recipe below in notes).
    For an extra special treat, mix the whipped cream right into the pudding for a creamy, dreamy texture.
    Optional topping - Chop nuts into small pieces.  Fold these into the pudding or use them to sprinkle on top.
