Banana Peanut Butter Yogurt Clusters

Looking for a delicious snack in a flash? Whip up these irresistible banana yogurt clusters. These delicious treats are like a mini ice cream bar, but much simpler and so much healthier. They are so easy to make with only a handful of ingredients and zero baking, nothing not to love!
I love simple recipes that take up to 15 minutes of active time to whip up during a busy week. This year fruit yogurt clusters had a real viral moment, so I had to try them too and I was not disappointed.
Frozen banana slices mixed with peanuts, peanut butter and plain Greek yogurt, covered in chocolate, and finished with a dusting of flaky sea salt. And you can let your taste buds run wild with fun mix-ins. Any chopped nuts, coconut shreds or chopped dried fruit as pretty much anything goes with this recipe. Just make it your own. They will be delicious whatever you add in.
These are such a yummy snack to keep stashed away in the freezer, and they completely fulfil any “sweet-tooth” cravings! A friend of mine who has really been limiting her sugar intake, is especially in love with these. The combination of sweet creamy banana, chocolate and vanilla is a healthier way to satisfy those chocolate cravings!
The contrast of the hard,chocolate snap to the creamy, dreamy, soft centre is just the best. And I love it when I find a snack that is healthy AND delicious, and these certainly are that.
Chocolate and nut butter is a match made in heaven. Seriously though these banana, peanut butter, yogurt clusters are SO good! They taste better than store bought treats or candy in my opinion. You can’t go wrong with these small but mighty bites that are both delicious and decadent.
Perfect to take to a potluck or family gathering. They will be gone in a heartbeat!

Ingredients

  • 2 bananas, ripe
  • 1/2 cup Greek yogurt
  • 1/2 cup dates, chopped
  • 1/4 cup salted peanuts, chopped
  • 2 tablespoons peanut (or any other nut) butter
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  • Line a baking tray with parchment paper or use a silicon baking mat.
    Peel the bananas and cut them into small pieces. Your banana should be ripe but firm and not mushy.
    Place in a medium mixing bowl along with the Greek yogurt, dates, peanuts, peanut butter, honey and vanilla. Stir gently to combine using a spatula. 
    Using a serving spoon make 12 (or more smaller clusters) spoonful’s or clusters of the banana mixture onto the lined tray, ensuring it will fit in the freezer first.
    Leave a little gap in between each spoonful. Transfer to the freezer and leave for one hour or until frozen solid.
     

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the clusters on the baking tray from the freezer. Working quickly, one by one add the clusters to the melted chocolate. Use two forks or a serving spoon to turn them around in the chocolate until fully coated.
    Lay each one back on the lined tray. Add any toppings while the chocolate is still wet - keep an eye out as you go as the chocolate will harden quickly.
    Some toppings include: flaked salt, cinnamon, flaked coconut, sprinkles or chopped nuts/seeds.
    When done, return to the freezer immediately. If you want to eat them right away, just freeze for 15 minutes, remove and serve.
    To have another time you will need to take them out of the freezer about 30 minutes before you are ready to eat so they soften a little.
    Store in a resealable food bag or air-tight container in the freezer for up to 3 months.
