Banana Peanut Butter Discs

Peanut butter, banana, and chocolate combine in this no bake, high protein, easy sweet treat. 
Oh my goodness, these are SO darn good! They are so very easy to make and will satisfy all your chocolate candy cravings. You simply mix the ingredients together in a bowl, freeze in dollops, then coat in melted chocolate. No food processor required.
This is another fabulous snack recipe doing the rounds of social media. You might have even seen them yourself as they are trending ALL over Facebook and TikTok becoming viral. And for good reason. They are really really good and I cannot stop eating them.
Who doesn't love the combination of chocolate and peanut butter?! Each is great, but they are better together and are a match made in heaven.
These chocolate banana discs are my go-to when I’m craving something indulgent. They are sweet but not too sweet, with a nutty, banana-y creamy flavor and a decadent chocolate coating. I know I can count on them to give me a little jolt of energy.
When I’m short on time, even just a quick little dip into the fridge for a bite gives me that boost I need. And, trust me, I find myself dipping into the fridge quite a lot when I make these little chocolate coated discs! They taste just like a candy bar, only better!
This recipe makes 12discs, but they stay fresh for up to a week (and they are always eaten well before then in my house)! If you are making them for just yourself, you can freeze them for up to three months. Simply pop a few in your fridge to thaw the night before and you have a nice little snack waiting for you to enjoy.
I love making a big batch of these bad boys and keeping them in the freezer for any time I have a chocolate craving (which is basically always). It really is like you are having your favorite candy bar, but made healthier!
When you are craving something sweet but don’t want to heat up the oven or spend a lot of time making a dessert, these bites are the perfect solution! These delightful little snacks really are the perfect indulgence. They remind me of ice cream bars, but in bite form and much healthier…
….and OMG… I dare you to just eat one! 😉

Ingredients

  • 1 banana, ripe, mashed
  • 1 cup peanut (or any nut or seed) butter
  • 1/2 cup Greek yogurt, plain
  • 1/3 cup peanuts, roughly chopped
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract

Chocolate Coating

  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Topping

  • Flaky sea salt
  • 1/4 cup peanuts, chopped

Instructions

  • In a medium bowl,mix together mashed banana, peanut butter, honey. peanuts, yogurt and vanilla until fully combined.
    Spoon 10-12 1-2 tablespoon sized dollops of the mix onto a parchment lined baking sheet, then flatten slightly into a disc shape.
    Place in freezer for about an hour until fully hardened.

Chocolate Coating

  • Place chocolate chips and coconut oil in small dish and microwave at 50% power with 30 second bursts stirring between each one until melted and smooth.
    Or use double boiler method - (pot of boiling water with a bowl resting on top) melt the chocolate chips and the coconut oil together.
    Remove the discs from the freezer and after checking they are firm and set, skewer each disc or use 1 or 2 forks to hold each one and dip into the melted chocolate, then place on a rack to dry.
    Place back onto parchment paper and sprinkle with sea salt or chopped peanuts if desired. Return to freezer for a few minutes until firm and set then serve.
    Store in a freezer safe container for up to 3 months. If fully frozen let thaw for 10-15 minutes before eating so they are soft on the inside.
