Banana Nice Cream With Caramel Sauce

I love nice cream! Its a yummy ice cream made with frozen fruit (usually bananas) base. Its my favorite healthy ice cream because it’s quick and easy to prepare, with only one main ingredient required.
You simply blitz pieces of frozen fruit in a food processor or high-speed blender and the end result is a whole-food ice cream that is rich, creamy, and luscious enough for a special occasion (birthday party, anyone?) yet light and easy enough for an any time indulgence.
But don’t take my word for it. It’s called ‘nice cream’ rather than ice cream, just to differentiate the two. Nice cream is a super easy, take on traditional ice cream, yet made very differently.
You don’t need one of those special ice cream churning machines, you simply use frozen bananas, a splash of milk and some flavourings – that’s it!
It sounds too good to be true doesn’t it? Ice-cream just out of bananas – yeah right! About this little concoction, I cannot hold back. It IS amazing. You will need to keep going back and trying it and saying – that can’t be right.
It tastes like ice-cream and it is so damn good! This is definitely one for the recipe bible. You will be in awe of the creamy, fruitful deliciousness before your spoon even begins to melt into the bowl.
You can satisfy a nice cream craving guilt-free with this “nice cream“! Seems so simple, that it feels like you are cheating a bit… but to be honest – it’s delectable stuff. And let’s face it, why make it complicated when something this simple can taste insanely delightful!
Once you start making nice creams, you will stop buying store bought ice creams, the creaminess it has is nothing less than any ice cream and the plus point is, it is absolutely healthy!

Ingredients

  • 3 bananas, sliced, frozen
  • 1/2 cup peanut (or any other nut or seed) butter
  • 1/4 cup milk of choice
  • 1/2 teaspoon vanilla extract

Topping

  • Healthy Caramel Sauce - recipe below in notes

Instructions

  • Chop the bananas into 1-inch slices and add them to a freezer-safe container. Freeze them until solid, at least 1 hour. If you freeze them overnight, let them thaw for about 20 minutes before using.
    Add the frozen banana pieces to a high-speed blender together with the peanut butter and a splash of milk.
    Blend until the mixture is super creamy and lump-free (about 30-60 seconds).
    You may need to stop your blender or food processor and scrape down the sides with a spatula to ensure everything is processed together evenly. It also helps pushing the ingredients with a tamper into the blades of the blender.
    Enjoy as it is as a soft serve nice cream or transfer the ice cream back to the freezer-safe container and freeze again until the ice cream can be scooped with an ice cream scoop.

    NOTES
    If you freeze the ice cream overnight it will be quite solid. Simply let it thaw for about 15-20 minutes, then it can be scooped easily.
